{"id":491781,"date":"2026-03-24T01:50:08","date_gmt":"2026-03-24T01:50:08","guid":{"rendered":"https:\/\/www.newsbeep.com\/uk\/491781\/"},"modified":"2026-03-24T01:50:08","modified_gmt":"2026-03-24T01:50:08","slug":"food-prices-explained-who-really-benefits-from-what-we-eat-dr-jacqueline-rowarth","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/uk\/491781\/","title":{"rendered":"Food prices explained: Who really benefits from what we eat \u2013 Dr Jacqueline Rowarth"},"content":{"rendered":"<p class=\"LolVegRJp\" style=\"display:none\">Further, what we are purchasing in the food basket is at a higher state of preparation than ever before \u2013 somebody else\u2019s time is being substituted for ours in kneading dough, scrubbing potatoes and roasting chickens. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">More of the household income is going to the providers of ready-to-eat food, in the supermarket, food carts, cafes and restaurants.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Since 1970, the University of Otago\u2019s Department of Human Nutrition has <a href=\"https:\/\/www.otago.ac.nz\/humannutrition\/research\/food-cost-survey\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.otago.ac.nz\/humannutrition\/research\/food-cost-survey\">surveyed the cost of food<\/a> in four main centres and calculated the minimum weekly cost of dietary needs.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In 2023 (the year of the last survey) Otago researchers reported that feeding a family of four (children 10 and 4) would cost $264, $343 and $412 on basic (carrots, oats and drumsticks), moderate (mushrooms, nutrigrain and thighs) and liberal (avocado, muesli and chicken breast) diets in Auckland, in comparison with $278, $362 and $434 in Wellington.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The calculations assume that the families have basic food preparation and cooking skills, as well as access to a large supermarket and cooking facilities to prepare meals. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Choice of food type (the calculations are not based on increasing quantity) makes a big difference to the wallet.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In the Stats NZ data, the reality of choices appears in the food and CPI basket. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In 2020, the food basket was adjusted to increase the weighting on restaurant meals and ready-to-eat food to 27.2%; in 2014, the category was 22% of expenditure. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Last year, the basket was <a href=\"https:\/\/www.stats.govt.nz\/news\/meal-kits-cruises-and-smart-watches-added-to-cpi-basket-in-latest-update\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.stats.govt.nz\/news\/meal-kits-cruises-and-smart-watches-added-to-cpi-basket-in-latest-update\/\">updated to include meal kits and remove celery<\/a>.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Expectations have changed, and a new norm has appeared, but for those on the land, it does feel like a beat-up when every month, Stats NZ data are greeted with \u201cfood prices up again\u201d.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Questions then emerge on who is taking advantage of the Kiwi battler?<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Farmers, supermarkets and banks are the usual suspects.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Various investigations have been done over the years along the food chain, including Commerce Commission reports into supermarket and bank behaviour. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The United States has the most comprehensive set of analyses, dividing a dollar spent by a consumer into the different beneficiaries in different ways.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The first is simply the amount of the supermarket dollar that, on average, reaches the farmer and grower.<\/p>\n<p><img  alt=\"Dr Jacqueline Rowarth, Adjunct Professor, Lincoln University, is a farmer-elected director of DairyNZ and Ravensdown. She is also a member of the Scientific Council of the World Farmers\u2019 Organisation.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The answer is <a href=\"https:\/\/www.ers.usda.gov\/data-products\/food-dollar\/documentation\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.ers.usda.gov\/data-products\/food-dollar\/documentation\">just over 9%<\/a>. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The people who actually till the soil receive 9.1c on average. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The processors (which, for most meat and dairy producers, are vital in turning the \u2018raw\u2019 product into something that customers want to buy) receive 13.2%. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Retail trade, the supermarkets and other outlets, receive 14.7%. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Food services receive the biggest proportion (31.5%, almost three-quarters of which is salary and benefits), and the rest goes to services like advertising, insurance and power.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Which part could we do without?<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\"><a href=\"https:\/\/australiainstitute.org.au\/wp-content\/uploads\/2024\/04\/Australia-Institute-Supermarket-Submission-REVISED.pdf\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/australiainstitute.org.au\/wp-content\/uploads\/2024\/04\/Australia-Institute-Supermarket-Submission-REVISED.pdf\">Australian analysis<\/a> has shown that in 2023, Woolworths and Coles supermarkets made 6.0% and 4.8% profit margins on total revenue, respectively. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In New Zealand, an increase in the number of providers for the mere 5.34 million people <a href=\"https:\/\/www.nzherald.co.nz\/business\/companies\/retail\/woolworths-boss-warns-supermarket-breakup-could-push-grocery-prices-up\/premium\/HUASOPVTONEMTEFMHDIINI75XQ\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.nzherald.co.nz\/business\/companies\/retail\/woolworths-boss-warns-supermarket-breakup-could-push-grocery-prices-up\/premium\/HUASOPVTONEMTEFMHDIINI75XQ\/\">could result in increased prices<\/a>.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In contrast, it might be that the <a href=\"https:\/\/www.interest.co.nz\/banking\/118382\/do-banks-really-make-too-much-profit-and-what-would-we-gain-if-they-made-less-what\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.interest.co.nz\/banking\/118382\/do-banks-really-make-too-much-profit-and-what-would-we-gain-if-they-made-less-what\">banks are being a trifle over-cautious<\/a> about protecting survival and keeping interest rates higher than strictly required.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In all these calculations, a small change at the bottom \u2013 such as the minimum wage \u2013 has a compounding effect. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">A percentage margin is made at every step to cover costs and risks. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">At each step, the actual figure increases.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The result can be record profits \u2013 or an unviable business.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Stock turn also makes a difference. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Farms have tended to become larger over the years for this reason. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The margin on a kilogram of milk solids or carton of apples won\u2019t keep the farming family in food, but adds scale, and economies start becoming viable. <\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Small businesses tend to fold into bigger ones for this reason.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The <a href=\"https:\/\/www.anz.co.nz\/business\/bizhub\/agribusiness\/agri-insights\/building-a-profitable-farming-business\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.anz.co.nz\/business\/bizhub\/agribusiness\/agri-insights\/building-a-profitable-farming-business\/\">ANZ report on farm costs<\/a> released this month reported that, on average, farm costs increased 31% between 2019 and 2024.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">The Reserve Bank Calculator indicates that consumer price index (CPI) inflation between 2019 and 2024 was 1.23% for general inflation, 1.27% for food and 1.30% for wages.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In the <a href=\"https:\/\/www.ers.usda.gov\/data-products\/food-dollar\/documentation\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.ers.usda.gov\/data-products\/food-dollar\/documentation\">American analysis of the food dollar<\/a>, salaries and benefits are the biggest overall component.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">In New Zealand, that is what keeps the economy humming and nutritious, safe food on the table.<\/p>\n<p class=\"LolVegRJp\" style=\"display:none\">Dr
