The last thing she expected was that it would be hampered by the food she was offered on the ward.<\/p>\n<p>\u201cI was very surprised at how bad the food was. It wasn\u2019t appetising,\u201d she says. \u201cI tried the jacket potato and it was cold. Then I tried the chicken potato-topped pie, but the grease immediately put me off. The fish was undercooked.<\/p>\n<p>\u201cIt was the same menu for lunch and dinner every day. Mostly, I had only cheese and crackers unless my family brought me something in.\u201d <\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2026\/04\/AdobeStock_557972295.jpeg\"  loading=\"lazy\" alt=\"NHS England encourages staff to try to avoid food waste\" class=\"sc-1mc30lb-0 ggpMaE inline-gallery-btn\"\/>NHS England encourages staff to try to avoid food waste (Svitlana &#8211; stock.adobe.com)<\/p>\n<p>Ms Stephenson says that during her hospital stay of nearly eight weeks, she didn\u2019t finish a hot meal.<\/p>\n<p>\u201cApart from breakfasts, that is, as I didn\u2019t want to sicken myself. I think there were a lot of complaints about the food. Even the nurses said to complain.\u201d<\/p>\n<p>The 50-year-old, from Tyne and Wear, believes her health would have improved sooner with better nutrition. \u201cI didn\u2019t always have an appetite. One nurse even said to me, \u2018I feel awful giving you these <a href=\"https:\/\/www.independent.co.uk\/topic\/meals\" rel=\"nofollow noopener\" target=\"_blank\">meals<\/a>\u2019.\u201d<\/p>\n<p>While in opposition in 2018, Labour <a href=\"https:\/\/www.independent.co.uk\/news\/health\/hospital-food-nhs-nutrition-labour-party-patients-recovery-meals-sugar-a8300101.html\" rel=\"nofollow noopener\" target=\"_blank\">promised new laws to tackle bad hospital food<\/a> with \u201cmandatory minimum standards\u201d after analysis found huge variations in spending on meals.<\/p>\n<p>But eight years on, Ms Stephenson and other patients say poor-quality food is hampering their progress, leading to longer recovery times.<\/p>\n<p>Kitchens often struggle to cater for special diets needed for medical reasons, and many patients rely on family members to take food in. <\/p>\n<p>Meanwhile, rejected meals mean large amounts of <a href=\"https:\/\/www.independent.co.uk\/topic\/food-waste\" rel=\"nofollow noopener\" target=\"_blank\">food waste<\/a>, which costs some <a href=\"https:\/\/www.independent.co.uk\/topic\/nhs\" rel=\"nofollow noopener\" target=\"_blank\">NHS<\/a> trusts tens of thousands of pounds each year.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2026\/04\/Screenshot_20260226_153815_Facebook.jpg\"  loading=\"lazy\" alt=\"One patient was offered two bits of potato and seven cubes of tuna as a meal\" class=\"sc-1mc30lb-0 ggpMaE inline-gallery-btn\"\/>One patient was offered two bits of potato and seven cubes of tuna as a meal (Facebook)<\/p>\n<p>In total, \u00a31.7m worth of food in the <a href=\"https:\/\/www.independent.co.uk\/topic\/nhs\" rel=\"nofollow noopener\" target=\"_blank\">NHS<\/a> in England was thrown away a year, the latest figures show. <\/p>\n<p>The amount that trusts disposed of rose by 8.5 per cent from 9,300 tonnes in 2022-23 to 10,100 tonnes in 2023-24.<\/p>\n<p>Five years ago, <a href=\"https:\/\/www.independent.co.uk\/topic\/nhs\" rel=\"nofollow noopener\" target=\"_blank\">NHS<\/a> chiefs launched the NHS Chef programme to raise food standards through training and competitions for caterers, and the following year, all NHS organisations were issued with a set of food standards to aim for, including actively reducing <a href=\"https:\/\/www.independent.co.uk\/topic\/food-waste\" rel=\"nofollow noopener\" target=\"_blank\">food waste<\/a>. <\/p>\n<p>But NHS England statistics show that in the two years after that, the cost of <a href=\"https:\/\/www.independent.co.uk\/topic\/meals\" rel=\"nofollow noopener\" target=\"_blank\">meals<\/a> uneaten rose by \u00a3600,000 \u2013 13.6 per cent \u2013 from \u00a31.1m worth in 2021-22 to an estimated \u00a31.5m worth in 2022-23 and \u00a31.7m worth in 2023-24.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2026\/04\/Laura-Abernethy.jpeg\"  loading=\"lazy\" alt=\"Laura Abernethy says she felt worse for eating only \u2018stodgy\u2019 food in hospital\" class=\"sc-1mc30lb-0 ggpMaE inline-gallery-btn\"\/>Laura Abernethy says she felt worse for eating only \u2018stodgy\u2019 food in hospital (Laura Abernethy)<\/p>\n<p>Patients have told The Independent the food they had in hospital was stodgy, starchy, mushy or rubbery, with insufficient provision for people with particular needs, especially when meals are not prepared on site.<\/p>\n<p>Writer Laura Abernethy, 33, from London, said the lack of high-quality nutrition had a huge impact on her health when she was in hospital to give birth to her son.<\/p>\n<p>\u201cI ended up eating a lot of very stodgy carbohydrate-heavy food with very little nutritious value, and I felt much worse,\u201d she said.<\/p>\n<p>\u201cI have an intolerance to tomatoes and any time I asked if something contained tomatoes, I was told they didn\u2019t know and wouldn&#8217;t check because \u2018it comes from a central kitchen\u2019. <\/p>\n<p>\u201cA lot of the time, I went for a jacket potato with cheese because it was safe. The food itself was not very nutritious but mostly edible.\u201d<\/p>\n<p>Ms Abernethy said: \u201cYou had the choice of fruit or a low-fat yoghurt with each meal, but they refused to let me have both. It seemed mad to restrict healthier items when you\u2019re in hospital trying to get better.\u201d<\/p>\n<p>Experts say about half of UK <a href=\"https:\/\/www.independent.co.uk\/topic\/hospitals\" rel=\"nofollow noopener\" target=\"_blank\">hospitals<\/a> outsource food preparation, and meals are better when hospitals employ catering staff directly. <\/p>\n<p>Nutrition consultant Kate Arnold, from East Sussex, said: \u201cFood <a href=\"https:\/\/www.independent.co.uk\/topic\/waste\" rel=\"nofollow noopener\" target=\"_blank\">waste<\/a> is astronomical in the NHS, but is it any wonder when, apart from food safety and calorie content, no thought goes into the quality of food? <\/p>\n<p>\u201cWhen you serve ultra-processed beige pulp, we cannot expect clean plates. Decent food not only helps with morale but could help save the NHS money with speedier recoveries and faster patient turnarounds. <\/p>\n<p>\u201cIn 30 years of being a nutritionist, I\u2019ve seen little change, and it\u2019s madness to continue down this path. One woman posted a photo of a single jacket potato with no filling or garnish that was offered to her daughter. <\/p>\n<p>However, some trusts report a drop in the number of meals uneaten this year.<\/p>\n<p>Claire Hill, a kitchen painter from Somerset, who spent three nights in Musgrove Park Hospital in Taunton in October, said her experience was very good. \u201cI was really impressed \u2013 there was lots of choice and it was appetising,\u201d she said.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2026\/04\/Claire-Hill-food.jpg\"  loading=\"lazy\" alt=\"Claire Hill\u2019s hospital meals included veg and potatoes\" class=\"sc-1mc30lb-0 ggpMaE inline-gallery-btn\"\/>Claire Hill\u2019s hospital meals included veg and potatoes (Claire Hill)<\/p>\n<p>And it\u2019s not just England and Wales. Tina Mur says whenever she is in hospital in Scotland, she loses weight because hospitals don\u2019t provide healthy foods suitable for a stoma patient, so she has to build herself back up again when she is back home. <\/p>\n<p>\u201cI have seen a lot of food being wasted as it\u2019s very bland, rubbery and reheated too much. <\/p>\n<p>\u201cThe toast is a standing joke in the wards \u2013 either only toasted on one side, or soggy and rubbery as it\u2019s covered in foil and left. It\u2019s standard processed white bread.
