Focaccia at Milburn and Herndon in northwest Fresno specializes in crunchy creations with melted cheese.
“We work really hard to cook the meat, and my girls execute well,” says owner Sanjay Gadh. “Without them, I’m nobody.”
Actually, he’s Gadh.
His wife, Renu, helps fill the constant orders.
“I’m making chicken pesto, basil chicken, brisket grilled cheese, pan-roasted turkey, tri-tip sandwich,” she said.

Sanjay says he’s worked as a chef in 21 countries.
That experience comes through in his savory sauces, which range from basil to red pepper spread.
“You can taste all the different flavors in all the different sandwiches,” Renu said.
“You go anywhere in the world, people know butter chicken,” Gadh said.
You’ve probably never had this Indian favorite in a sandwich.
The sauce has a habanero kick.
“Even my own community, even all the Indians, they love it,” Gadh said.
The fresh focaccia and ciabatta are full of meat.
Take the Triple Cuban.
“It has a homemade chorizo and prosciutto,” Gadh said. “It has bacon on it and a fried egg. That takes it to the next level.”
The selections show this is not your typical sandwich place.
You can pair your sandwiches with a selection of soups.
“Lentil, we make every other day,” Gadh said.
Salads are always popular with the health-conscious.
“Our best seller is a chicken quinoa salad and an Asian chicken salad,” Gadh said.
All of the sandwiches are served with fruit.
“Although my label is not there, you know it’s from Focaccia because there’s fruit inside,” Gadh said.
