Verise, a modern Italian restaurant specializing in the cuisine of central Italy interpreted through a Southern California lens, opened March 4 at the new Hotel Solea on Grand Pacific Drive in Carlsbad.
Verise’s menu was conceived by Italian-born chef Riccardo Bilotta, who previosu worked with top chefs at Michelin-starred restaurants in Europe and Spain, including Il Pellicano in Tuscany and El Celler de Can Roca in Spain. Jason Luke is the executive chef for Verise and Hotel Solea.

Verise offers breakfast, lunch and dinner service.
The breakfast menu inclues lemon ricotta pancakes avocado bruschetta, a grilled mortadella and provolone sandwich, and lox and ricotta croissant. The lunch menu features salads, housemade pastas, wood-fired pizzas, sandwiches and a burger and plated entrées.
The dinner menu features house-made pastas, pizzas, seafood, tableside cheese wheel service, an amaro cart and more.
The 201-room Hotel Solea is a Marriott Bonvoy Autograph property. Formerly it was the Sheraton Carlsbad Resort & Spa.
