Oven/Grilled Roasted Marinated Veggies
Ingredients:
2 eggplants2 zucchinis2 squash2 white or yellow onions2 red bell peppers2 yellow bell peppers1/2 pint Italian dressings1 table spoon salt1 table spoon pepper1 oz balsamic1 oz oregano2 oz olive oil

Directions:
Cut bell peppers in half and deseed. Place on baking sheet.Slice eggplant, zucchini, squash, onions. Place on baking sheet.Sprinkle salt, pepper, Italian dressing, balsamic and oregano.Place in preheated oven 375′ for 15-20 min until toasted or golden brown.Pull out of oven let sit 30 min on counter or room temperature.Taste and more salt if needed.Slice/chop arrange on platter drizzle with more Italian dressing if needed.Italian Sausage Appetizer

1 – 1 1/2 sausage links per person this can be bbq or sautéed fresh or ahead of time1/2 pint marinara sauce1/2 oz oregano4 oz sliced roasted red bell peppers2 oz roasted chopped onions1 oz sliced basil1 oz olive oil or 1 tbls olive oilpinch parmesianpinch chopped parsleyPinch salt and pepper

In a sauté pan on high heat, add peppers, onions, sliced sausage, brown and deglaze. Add marinara sauce, basil, oregano, salt and pepper to taste. Toss and reduce, taste again. Always when plating, build up to create a base of onion/peppers mixture to the bottom of plate, add the sausage then the remainder of the mixture over the sausage. Add parmesan and parsley.
