When they arrived, they found a Ford F-250 was traveling eastbound on Central when the driver turned left at DeWolf, in the path of an oncoming Toyota Camry.
The Toyota driver could not avoid the collision and crashed into the truck.
The driver and passenger in the Ford were not injured, CHP said.
The Toyota driver suffered major injuries, but CHP said he tried to run away from the crash.
They say he collapsed a short distance away in a nearby orchard because of his injuries.
The right front passenger in the Toyota, identified as 72-year-old Jesse Hernandez of Fowler, was not wearing a seat belt and died at the scene.
