Sacramento County Health Inspectors cited a pizza chain restaurant after finding black-slime like accumulation in the facility.
Additionally, health inspectors cited four other eateries for violations including a lack of toilet paper in the women’s restroom and one location that lacked an employee who had passed a food safety certification test.
What do these inspections mean?
While a yellow placard signals two or more major violations, these are typically corrected or mitigated during the inspection, according to the Sacramento County Retail Food Inspection Guide.
A red placard, however, signals “imminent danger to public health and safety” and suspends an establishment’s health permit until violations are corrected. This could include, but is not limited to, major vermin contamination.
In contrast, a green placard means a restaurant passed inspection. The county performs about 14,000 inspections annually and about 97% of establishments pass, spokesman Ken Casparis previously told The Sacramento Bee.
Approximately 1% of inspections result in a closure, he said.

Sacramento County Health Inspectors cited the Tahoe Park cafe after discovering the handwash sink was blocked with large packages and no soap available.
Cooked chicken and half-and-half were held at improper hot and cold temperatures.
Scoops for ice were inside the container with the handle in direct contact with the ice.
The mop head was stored directly inside the mop bucket, soiled and wet, and not in use.
Dolce Caffe was reinspected on Friday, July 17 and passed with a green placard.

Health inspectors cited the Downtown Sacramento deli after finding the handwash station closest to the vegan prep station lacking paper towels.
Cut tomatoes, bean sprouts, cheddar, provolone, pepper jack and tuna were all held above proper cold holding temperatures.
One stall in the women’s restroom lacked toilet paper.
The facility lacked an employee that had passed a food safety certification exam.
Beach Hut Deli was reinspected on Saturday, July 18 and passed with a green placard.

Health inspectors cited the Arden Fair pizza chain after discovering the front handwashing sink was blocked by a swinging door.
Potato wedges and tomato wedge salad were held at improper cold holding temperatures.
At the time of inspection, the timer had expired on multiple food items held under time as a public health control. These items included sausage pizza, mushroom pizza and pepperoni calzone.
Black slime-like accumulation was found within the ice machine.
Sbarro had yet to be reinspected as of Thursday, July 23.

Heavy black mold like biofilm and bacterial slime residue were found inside the ice machine.
The three compartment sink’s drainage was clogged.
The fan guards in the walk-in cooler was encrusted with residue.
Palace Food Service had yet to be reinspected as of Thursday, July 23.
