In an unforeseen twist, the hottest reservation in the Hamptons this summer was Babe’s Sag Harbor — a train car-inspired diner with a throwback vibe and just eight seats at the coveted counter.
The debut restaurant from husband-and-wife team Julian Cavin (Greenberg’s Bagels, Brooklyn Best) and artist Martine Langatta, along with music producer Jonny Shipes and his wife, serves classic egg and cheese sandwiches and decadent lunch options like a wagyu hot dog.

But by far the biggest breakout item has been the absolutely addictive banana chocolate chip pancakes — in no small part responsible for attracting unprecedented lines, a host of celebrities (including Justin Bieber, Meg Ryan, Neil Patrick Harris, Emma Roberts, Alix Earle, the cast of Love Island and players from the Knicks and Yankees) and a flurry of camera flashes.
But West Coasters who couldn’t make it East and have been living vicariously through Instagram are in luck: Babe’s is taking its viral banana chocolate chip pancakes on the road, quite literally, in a four-day, rock concert-style pancake tour. And yes, there will be tour T-shirts.

From Sept. 10–13, Babe’s will pop into four popular L.A. eateries — Mish Delicatessen, Cookbook in Larchmont, Uncle Paulie’s on West 3rd Street and LEORA Cafe in Beverly Hills — all powered by Dorsia. Each “stop” on the breakfast road show will feature the famed Babe’s pancakes (Babe’s classic, banana chocolate chip and blueberry varieties) alongside something specially created by the host restaurant.

“Babe’s was always meant to be fun, familiar and a little unexpected, and somehow the pancakes became the thing people connected with most,” says Babe’s co-owner Cavin. “This tour lets us take that energy out of Sag Harbor and see what happens when it lands in Los Angeles.”
Co-owner Shipes believes the brand’s vision will translate. “Babe’s grew because people made it part of their own culture,” he says. “They posted it, talked about it, brought their friends and turned these pancakes into something bigger than a breakfast item. L.A. felt like the right place to take that energy next, and Dorsia has been the perfect partner to help connect the dots.”
The road trip follows Babe’s summertime collaborations with New York institution Barney Greengrass, Whitney Port’s High Confectionary and Kith founder Ronnie Fieg’s Ronnie’s New York — and more is in store for the eight-seat diner that could.

“Babe’s has built something that goes beyond pancakes,” says Joshua Stern, co-founder of Dorsia — which works with Babe’s in the Hamptons and is powering the L.A. tour through its reservations platform, restaurant network and member community. “Bringing Babe’s to L.A. with Dorsia felt like a natural fit, and we’re excited to help introduce them to a new audience and give our members access to a place that already has such a strong following.”
Reservations are limited and available through Dorsia, though a membership is not required.
