All images courtesy of Proyecto Diaz.<\/p>\n<p>\u00a0<\/p>\n<p>Oaxaca-linked, Oakland, California-based coffee roaster <a href=\"https:\/\/www.proyectodiazcoffee.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Proyecto Diaz<\/a> this month opened its second cafe shortly after firing up a brand-new <a href=\"https:\/\/loring.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Loring<\/a> roaster in its Oakland roastery.<\/p>\n<p>The company also launched a new bean-to-bar, single-origin Latin American chocolate brand called Metate Chocolate.\u00a0<\/p>\n<p>The new cafe opened on the north edge of downtown on the ground floor of a building that also holds coworking space and corporate offices.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/03\/proyecto-diaz-opens-second-oakland-cafe-launches-metate-chocolate\/projecto-diaz-oakland-cafe\/\" rel=\"attachment wp-att-194233 nofollow noopener\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-194233\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2026\/02\/Projecto-Diaz-Oakland-cafe.jpeg\" alt=\"Projecto Diaz Oakland cafe\" width=\"1240\" height=\"1653\"  \/><\/a><\/p>\n<p>There, Proyecto Diaz took over the former Bicycle Coffee Co. space, adding pendant lighting and rope-suspended terracotta planters to bring a little more earthiness and Mexican cultural flair to the existing foundation of a white marble bar and concrete counters. Behind the bar, vibrant green dragon-scale tile remains, now topped with Oaxaca-made pottery pieces.<\/p>\n<p>A warm pot of ready-to-serve tamales joins signature drinks at the Broadway shop, including cafe de olla and lattes flavored with mazapan and horchata. Metate Chocolate \u2014 named after the ancient stone grinding tool still used in rural Latin American households for corn, spices and cacao \u2014 supplies drinking chocolate for both cafes.<\/p>\n<p>\u201cSpecialty cacao is kind of synonymous with coffee, in that it\u2019s grown in similar regions by small lot growers, similar producer backgrounds,\u201d Proyecto Diaz Founder Fernando Diaz told Daily Coffee News. \u201cChocolate is one of those things that is like the heartbeat of Mexico.\u201d<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/03\/proyecto-diaz-opens-second-oakland-cafe-launches-metate-chocolate\/projecto-diaz-oakland-coffee-bags\/\" rel=\"attachment wp-att-194234 nofollow noopener\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-194234\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2026\/02\/Projecto-Diaz-Oakland-coffee-bags.jpeg\" alt=\"Projecto Diaz Oakland coffee bags\" width=\"1240\" height=\"918\"  \/><\/a><\/p>\n<p>The first Metate chocolate bars now for sale online and in Proyecto Diaz cafes spotlight cacaos from Chiapas and Tabasco, with coffee-like provenance details including elevation, processing method, varieties and details about the producers.\u00a0While cacao is not grown on El Carmen, <a href=\"https:\/\/dailycoffeenews.com\/2016\/02\/05\/from-oaxaca-to-oakland-proyecto-diaz-offers-the-promise-of-progress\/\" rel=\"nofollow noopener\" target=\"_blank\">the Diaz family farm in Oaxaca<\/a>, Diaz said family members grow cacao on other farms nearby, which he hopes to bring into the program soon.<\/p>\n<p>\u201cA lot of these small-scale producers are also growing cacao on their farms oftentimes for their own personal use, because chocolate\u2019s one of those things that you always have on hand in Mexico, and predominantly in Oaxaca,\u201d said Diaz. \u201cYou always just have a little stash.\u201d<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/03\/proyecto-diaz-opens-second-oakland-cafe-launches-metate-chocolate\/projecto-diaz-oakland-shop\/\" rel=\"attachment wp-att-194237 nofollow noopener\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-194237\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2026\/02\/Projecto-Diaz-Oakland-shop.jpeg\" alt=\"Projecto Diaz Oakland shop\" width=\"1240\" height=\"1653\"  \/><\/a><\/p>\n<p>Metate\u2019s drinking chocolate and individual bars are now being offered to Proyecto Diaz\u2019s wholesale clients. Cacao roasting takes place at the company\u2019s <a href=\"https:\/\/dailycoffeenews.com\/2023\/12\/06\/with-new-roastery-proyecto-diaz-is-readying-first-cafe-in-oakland\/\" rel=\"nofollow noopener\" target=\"_blank\">Oakland roastery<\/a> on a San Franciscan SF-25 machine, while the company dials in a new Loring S35 Kestrel for primary coffee production.<\/p>\n<p>Progress at El Carmen remains focused on recovery from recent floods and storm damage, Diaz said. Coffee production is gradually returning to roughly 80% of potential, while experimentation is underway with raised beds for post-harvest coffee drying, as opposed to the traditional concrete patios of the region. Diaz said the goal is for the coffees to result in a crisper, cleaner cup profile.\u00a0<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/03\/proyecto-diaz-opens-second-oakland-cafe-launches-metate-chocolate\/projecto-diaz-oakland-coffee-bags\/\" rel=\"attachment wp-att-194234 nofollow noopener\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-194234\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2026\/02\/Projecto-Diaz-Oakland-coffee-bags.jpeg\" alt=\"Projecto Diaz Oakland coffee bags\" width=\"1240\" height=\"918\"  \/><\/a><\/p>\n<p>\u201c[Producers] don\u2019t want to change because they\u2019re afraid something\u2019s going to happen, that it\u2019s not going to taste good anymore, [or] just because that\u2019s literally what they\u2019ve been doing for generations,\u201d said Diaz. \u201cIt\u2019s difficult to introduce a new concept, and it does take a little bit more time to dry because the cement is hotter. So there\u2019s that learning curve and then there\u2019s a patience curve, too.\u201d<\/p>\n<p>In the meantime, Diaz said the company is trying to catch its breath while solidifying its footing on three fronts: expanded roasting, Metate Chocolate and operating the two Oakland cafes.\u00a0<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/03\/proyecto-diaz-opens-second-oakland-cafe-launches-metate-chocolate\/projecto-diaz-oakland-roastery\/\" rel=\"attachment wp-att-194236 nofollow noopener\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-194236\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2026\/02\/Projecto-Diaz-Oakland-roastery.jpeg\" alt=\"Projecto Diaz Oakland roastery\" width=\"1240\" height=\"1653\"  \/><\/a><\/p>\n<p>\u201cWe have all these irons in the fire and it\u2019s just a matter of focusing,\u201d said Diaz. \u201cWe\u2019re tempering and sharpening those again.
