At Hollywood Distillery, the owners are sourcing grains from Southern California farmers and using Coachella Valley dates to sweeten and ferment their award-winning vodka.<\/p>\n<p>\u201cYou can taste that it\u2019s not your typical vodka that you\u2019re getting from any of the other brands around the world,\u201d co-owner Jeff Zarrinnam said. \u201cIt\u2019s very unique and unusual.\u201d<\/p>\n<p>The copper of their stills can be seen from Santa Monica Boulevard, with large windows that look in on the distillery across from Hollywood Forever Cemetery. The space itself was originally a Pierce Brothers Mortuary, but now is home to spirits of another nature.<\/p>\n<p>Hollywood Distillery\u2019s gin, the Nopalera, derives its name from L.A.\u2019s early topography of cactus fields and prickly pears; the latter is used in the distilled spirit, as are native herbs and spices like sage. Their Zanja-Madre rye and bourbon were named for one of the first aqueducts to power Los Angeles. Lebanon-born co-founder Ferris Wehbe wondered whether vodka could be made using dates, another regional inspiration and an ingredient intrinsic to his upbringing.<\/p>\n<p>            <img class=\"image\" alt=\"The backs of wooden bar stools lined up along the bar at Hollywood Distillery\"   width=\"1200\" height=\"800\" src=\"https:\/\/www.newsbeep.com\/us-ca\/wp-content\/uploads\/2025\/10\/1761129428_876_\" decoding=\"async\" loading=\"lazy\"\/>         <\/p>\n<p>Hollywood Distillery debuted its facility and taproom in late 2025 with gin, vodka, bourbon and rye \u2014 with more spirits to come.<\/p>\n<p>(Stephanie Breijo \/ Los Angeles Times)<\/p>\n<p>\u201cIn Lebanon in late September and October, it\u2019s time to celebrate,\u201d he said. \u201cThey distill ouzo [arak] over there, and it\u2019s about bonding, it\u2019s about music, and different villages distill different things.\u201d<\/p>\n<p>Wehbe, who owned <a class=\"link\" href=\"https:\/\/www.latimes.com\/archives\/blogs\/daily-dish\/story\/2011-06-29\/next-door-lounge-set-to-open-in-hollywood\" rel=\"nofollow noopener\" target=\"_blank\">Hollywood speakeasy Next Door Lounge<\/a>, asked a distiller if they could make vodka with dates in a nod to the fermented date palm sap often found in arak. What became Hollywood Distillery\u2019s first product, called Oasis Vodka, won double gold medals in a 2019 competition. The owners knew they were onto something.<\/p>\n<p>The project began much earlier, <a class=\"link\" href=\"https:\/\/www.latimes.com\/business\/la-fi-california-distilleries-20151016-story.html\" rel=\"nofollow noopener\" target=\"_blank\">when Gov. Jerry Brown signed<\/a> the Craft Distillers Act of 2015 into law, which allows local distilleries to sell a limited number of bottles of its spirits onsite and offer distilled spirits straight and in cocktails. Seeing this as a now-viable business model, longtime friends Wehbe and Jeff Zarrinnam determined to build their own distillery. <\/p>\n<p>Through a separate business venture, Zarrinam met Larry Neuberg, who owned the building where Hollywood Distillery now resides. The trio \u2014 who call themselves \u201cthe partners in hooch\u201d \u2014 come from a range of backgrounds including hotel operations, importing and exporting, and children\u2019s education.<\/p>\n<p>\u201cWe all have other things that we do, so we sort of nicknamed it a passion project,\u201d Neuberg said. \u201cBoy, did we not know what we were getting into.\u201d<\/p>\n<p>After a decade of planning, research and an extensive buildout involving custom equipment, Hollywood Distillery is now open. The roughly 5,500-square-foot operation offers tasting flights, cocktails, a \u201cprivate-barrel club,\u201d food pop-ups and experiential programming such as murder mystery nights. The owners plan to eventually expand their offerings with rum and an agave-based spirit, plus future collaborations with local businesses \u2014 including the cemetery. But his signature item, the labor-of-love cocas, took years of study and work to perfect.<\/p>\n<p>Casa Leo\u2019s take on the Catalan flatbread comes topped with local and L.A.-inspired ingredients as well as Iberian accoutrements, for combinations like summer corn with katsuobushi, mint and Fresno chiles; lardons with caramelized onions and fresh passion fruit; and tuna conserva with Manzanilla olives and tomatoes. <\/p>\n<p>At brunch, find the full cocas menu as well as a bagel-and-lox variety, plus pastries, Spanish tortillas and more.
