While the two share a crescent-shaped DNA, her quesadillas fritas are built on a foundation of masa, which yield a shatteringly crisp yet slightly chewy texture, providing the perfect foil for melty cheese and various fillings.<\/p>\n<p>\u201cI get a lot of people saying they\u2019re empanadas,\u201d said Bree. \u201cBut the texture is different. Mine are more crunchy. I think it just depends where you\u2019re from.\u201d But in Bree\u2019s world, where she grew up with Guatemalan parents, they\u2019re a favorite childhood memory from food carts in Downtown L.A.<\/p>\n<p>Hungry? Her business name is a portmanteau of her name and his, and her logo features a puzzle piece, a nod to Skyler\u2019s autism. (Photo by Brock Keeling, Orange County Register\/SCNG)<\/p>\n<p>\u201cI told myself before I turn 30 that I have to figure out a way to get by better financially,\u201d she said. \u201cIt\u2019s been a challenge doing everything on my own and for my son, living paycheck to paycheck.\u201d The long lines and praise on social media, as well as yours truly, confirm that she\u2019s on her way to living a better life, one quesadilla fritas at a time.<\/p>\n<p>In the beginning success was slow. She recalled a day in Glendale where she sold exactly one quesadilla. But things really took off after <a href=\"https:\/\/www.tiktok.com\/@ohitsjust.bree\/video\/7591059919311211807?lang=en\" target=\"_blank\" rel=\"noopener nofollow\">getting the attention of Leo Gonz\u00e1lez<\/a> and his 3.6 million TikTok followers. Since then, she\u2019s been featured on other food influencer pages and lines have been growing over the last few weeks.<\/p>\n<p>Quesadillas iterations at BreeSky\u2019s include cheese, tinga, potato and chorizo, and raja (strips of peppers and onions). A plate of three quesadillas cost $13.50, three quesadillas plus a beverage costs $15. Also, horchata is available for $5. While there will be a bit of a wait in line for the freshly-fried food, it\u2019s worth the time.<\/p>\n<p>What to order: The raja with melty cheese is a choice to eat, as is the savory, juicy chicken that pairs nicely with that masa crunch. But go for the trifecta and order one of each. Added bonus: BreeSky popped up next to <a href=\"https:\/\/www.instagram.com\/charliesbirria\/\" target=\"_blank\" rel=\"noopener nofollow\">Charlie\u2019s Birria<\/a> last Sunday, which offers equally tasty fare, ranging from tacos and quesabirria eggrolls to fries and loaded nachos.<\/p>\n<p>Find it: Bree currently pops up on Sundays in Santa Ana (most recently in the same lot as Halladay Market at 601 East Central Ave.) with semi-recurring days in Los Angeles.
