These are typically corrected or mitigated during the inspection, according to the <a target=\"_blank\" rel=\"Follow nofollow noopener\" href=\"https:\/\/emd.saccounty.gov\/EH\/Documents\/Inspection%20Guide%2010-24-24.pdf\">Sacramento County Retail Food Inspection Guide<\/a>.<\/p>\n<p>A red placard, however, signals \u201cimminent danger to public health and safety\u201d and suspends the health permit until violations are corrected. This could include, but is not limited to, <a target=\"_blank\" rel=\"Follow nofollow noopener\" href=\"https:\/\/www.sacbee.com\/news\/local\/article288124385.html\">major vermin contamination<\/a>.<\/p>\n<p>In contrast, a green placard means a restaurant passed inspection.<\/p>\n<p>The county performs about 14,000 inspections annually and about 97% of establishments pass, spokesman Ken Casparis previously told The Sacramento Bee.<\/p>\n<p>Approximately 1% of inspections result in a closure, he said.<\/p>\n<p>These were the results of Sacramento County food facility inspections for Thursday, Feb. 26, through Wednesday, March 4, as of Thursday, March 5. tomatoes and various shredded cheeses above proper temperatures. They also measured cooked beans below hot holding temperatures.About 20 pounds of cooked chicken was improperly cooled and measured above proper temperatures. The restaurant voluntarily discarded the chicken.
