Place on baking sheet.Slice eggplant, zucchini, squash, onions. Add marinara sauce, basil, oregano, salt and pepper to taste. Toss and reduce, taste again. Always when plating, build up to create a base of onion\/peppers mixture to the bottom of plate, add the sausage then the remainder of the mixture over the sausage. Add parmesan and parsley.
