Ricky Tindell, Regional Managing Partner for Thunderdome Restaurant Group, stated that the restaurant\u2019s focused identity has resonated with urban diners and helped set it apart since opening. Tindell also noted that in 2026, diners are seeking bold flavor and an escape through food.<\/p>\n
\u201cWe\u2019re leaning into our roots with seasonal ingredients and street-fare inspiration \u2013 this short rib taco is a crowd favorite for a reason,\u201d Tindell said.<\/p>\n
The short rib taco, a popular menu item, features braised short rib, queso fresco, crema, pickled white onion, radish, cilantro, and a side of guacamole. Tindell described it as a perfect expression of the restaurant\u2019s food style.<\/p>\n
The new guava-passionfruit margarita is one of the standout additions to the cocktail menu. Tindell emphasized that tequila is at the heart of Bakersfield. The drink is made with tequila blanco, Chinola passionfruit liqueur, and a house-made guava sour mix. Tindell characterized the drink as tropical, vibrant, bright, and refreshing.<\/p>\n
The guava-passionfruit margarita is available by the glass for $14 or by the pitcher for $50. It is offered for various occasions, including celebrations, private events, or casual visits.<\/p>\n
Bakersfield offers private event spaces that can accommodate up to 50 guests. These spaces include two upstairs patios. The restaurant also provides a full catering program for off-site events. A current catering promotion offers a $25 credit back on a spend of $250.<\/p>\n
