From the widely recognized <a href=\"https:\/\/www.aperol.com\/en-us\/aperol-spritz-cocktail\/\" rel=\"nofollow noopener\" target=\"_blank\">Aperol spritz<\/a> to the fast-rising <a href=\"https:\/\/www.liquor.com\/hugo-spritz-cocktail-recipe-5194222\" rel=\"nofollow noopener\" target=\"_blank\">Hugo spritz<\/a>, they\u2019ve become the quintessential summer beverage. Low in ABV, refreshing and incredibly aesthetic (necessary for social media), it\u2019s easy to understand the allure.<\/p>\n<p class=\"wp-block-paragraph\">Better yet, they\u2019re easy to serve when entertaining. A Hugo spritz is traditionally finished with mint sprigs and lime slices, but this version takes a turn by leaning into seasonal peaches, using them both fresh and cooked. The peach elderflower base yields enough for two spritzes, but can easily be doubled, tripled or even quadrupled, if batch-making for entertaining.<\/p>\n<p>Ingredients<\/p>\n<p class=\"wp-block-paragraph\">Peach Elderflower Base (makes about 6 ounces)<\/p>\n<p class=\"wp-block-paragraph\">\u00bd very ripe yellow peach, pitted and roughly chopped (about 2 ounces)<\/p>\n<p class=\"wp-block-paragraph\">2 to 3 tablespoons water<\/p>\n<p class=\"wp-block-paragraph\">4 ounces elderflower liqueur (such as <a href=\"https:\/\/www.stgermainliqueur.com\/us\/en\/\" rel=\"nofollow noopener\" target=\"_blank\">St-Germain<\/a>)<\/p>\n<p class=\"wp-block-paragraph\">Juice of \u00bd lemon (about \u00be ounce)<\/p>\n<p class=\"wp-block-paragraph\">Peach Elderflower Spritz (1 serving)<\/p>\n<p class=\"wp-block-paragraph\">Ice<\/p>\n<p class=\"wp-block-paragraph\">3 ounces prosecco<\/p>\n<p class=\"wp-block-paragraph\">3 ounces peach elderflower base<\/p>\n<p class=\"wp-block-paragraph\">Club soda, to finish<\/p>\n<p class=\"wp-block-paragraph\">Fresh peach slices, for garnish<\/p>\n<p>Instructions<\/p>\n<p class=\"wp-block-paragraph\">Step 1<\/p>\n<p class=\"wp-block-paragraph\">In a small saucepan, combine the chopped peach and 3 tablespoons of water. Cook over medium-low heat, stirring occasionally, until the peach softens and the water is absorbed, about 4 minutes. Use the back of a spoon to mash the peach, then continue cooking until the mixture appears jammy, about 1 to 2 minutes. Turn off the heat and cool for 5 minutes.<\/p>\n<p class=\"wp-block-paragraph\">Step 2<br \/>Prepare the peach elderflower base: Transfer the cooked peach mixture to a high-speed blender. Add the elderflower liqueur and lemon juice. Blend until smooth.<\/p>\n<p class=\"wp-block-paragraph\">Step 3<\/p>\n<p class=\"wp-block-paragraph\">Fill a wine glass with ice. Add the peach elderflower base and prosecco.
