{"id":39818,"date":"2025-11-05T22:45:13","date_gmt":"2025-11-05T22:45:13","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-ca\/39818\/"},"modified":"2025-11-05T22:45:13","modified_gmt":"2025-11-05T22:45:13","slug":"san-francisco-ikea-drops-the-operator-of-its-struggling-food-hall","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-ca\/39818\/","title":{"rendered":"San Francisco Ikea drops the operator of its struggling food hall"},"content":{"rendered":"<p class=\"paragraph-block article-body undefined text-left\">Ingka, the parent company of Ikea, is ending a partnership with the British developer that had been overseeing the Mid-Market store\u2019s struggling multilevel dining complex, Saluhall.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Ingka has \u201cmutually agreed\u201d to end its partnership with Kerb Food, which has operated Saluhall since its debut in April 2024. Ingka will take over day-to-day operations of the business; Saluhall\u2019s branding will remain in place.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">It\u2019s a big reset for a food concept once hailed as a Market Street savior. Ingka <a href=\"https:\/\/www.sfgate.com\/local\/article\/saluhall-sf-ikea-ingka-centres-food-hall-19395887.php\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">pitched Saluhall as a concept (opens in new tab)<\/a> that it could replicate around the world. But recent closures of vendor restaurants and turnover in management show that the model has failed to find its footing. The hall\u2019s second floor has two empty kiosks out of five and vendors who have not yet renewed their leases. The food hall has lacked consistent foot traffic, particularly for businesses on the second floor, according to four current and former vendors <a href=\"https:\/\/www.sfgate.com\/food\/article\/restaurants-exit-sf-food-hall-20214137.php\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">who have struggled (opens in new tab)<\/a> to make ends meet.<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">\u201cThere was only so much a management company could do,\u201d said Lourdes Nau, proprietor of Casa Borinque\u00f1a, a Puerto Rican restaurant that was one of Saluhall\u2019s first tenants. She blames her slow sales on Market Street\u2019s reputation for drug markets and homelessness. \u201cWe just need foot traffic back to the street \u2014\u00a0if people don\u2019t want to come to the area, then I don\u2019t think this is just a marketing problem.\u201d\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Her lease has ended, and she\u2019s deliberating whether to stay. \u201cIt feels like a venture into the unknown right now,\u201d she said. \u201cI feel optimistic but nervous about it as well.\u201d\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">One former vendor, who requested anonymity to speak freely about management, said Kerb\u2019s U.K.-based leaders \u201cdidn\u2019t understand the culture here\u201d and were difficult to work with. \u201cI just felt like there was ambivalence and a lack of support.\u201d\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">The 450-seat complex on Market Street <a href=\"https:\/\/sfstandard.com\/2024\/04\/11\/san-francisco-ikea-food-hall-opens-review\/\" data-post-id=\"886ff6f3-65ff-4550-8826-9ed8ec218db3\" rel=\"nofollow noopener\" target=\"_blank\">opened<\/a> with primarily vegetarian and vegan options but pivoted in January to bring in a wider range of eateries \u2014\u00a0including the popular <a href=\"https:\/\/sfstandard.com\/2025\/02\/03\/san-francisco-peak-smash-burger\/\" data-post-id=\"f4738198-7573-4924-abce-896a4a7acb80\" rel=\"nofollow noopener\" target=\"_blank\">smashburger joint<\/a> Smish Smash. Several of Saluhall\u2019s original restaurateurs <a href=\"https:\/\/sfstandard.com\/2025\/08\/25\/momo-noodle-leaving-saluhall\/\" data-post-id=\"4a3e29ff-ff5a-4ab4-8da8-1bbf10ace917\" rel=\"nofollow noopener\" target=\"_blank\">closed shop<\/a> in the months that followed.<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">But even some of the new, meat-forward tenants have struggled: <a href=\"https:\/\/www.sfgate.com\/food\/article\/sf-saluhall-food-hall-gains-tacos-el-ultimo-baile-20341612.php\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Taqueria El Ultimo Baile (opens in new tab)<\/a> operated for only a few months before <a href=\"https:\/\/www.instagram.com\/p\/DOPYmUwj8Nx\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">departing the food hall (opens in new tab)<\/a> in September.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Several kiosk operators and a Saluhall employee said they believe Ingka\u2019s decision to part ways with Kerb will enable the food hall to streamline its operations and cut costs. Saluhall\u2019s management has suffered from high turnover in recent months, according to sources, and the lack of consistency has rattled vendors.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Vendors fear that Ingka may eliminate one of Saluhall\u2019s key draws: its communal dishwashing and table busing service. While she assumes that the method was a significant cost for Saluhall, she\u2019s apprehensive about how more take-out containers will affect her own budget.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">The opening of the first Ikea in San Francisco in 2023 was hailed as a victory for the beleaguered downtown core, which was struggling with office and retail vacancies as a result of the pandemic shutdown.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Ingka acquired the site of a vacant mall at 945 Market St. in 2020. The cost of purchasing and redeveloping the property was <a href=\"https:\/\/www.prnewswire.com\/news-releases\/ingka-centres-acquires-6x6-building-in-downtown-san-francisco-301125632.html\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">more than $260 million (opens in new tab)<\/a>.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">In addition to Saluhall, Ingka launched <a href=\"https:\/\/sfstandard.com\/2025\/04\/06\/ikeas-food-hall-may-be-dying-but-its-swedish-meatball-class-gave-me-life\/\" data-post-id=\"864e5c8a-1e92-43c8-b9a7-746c6af3d0f4\" rel=\"nofollow noopener\" target=\"_blank\">a cooking school<\/a>, as well as <a href=\"https:\/\/sfstandard.com\/2024\/03\/07\/ikea-bets-on-san-francisco-office-coworking\/\" data-post-id=\"8f39e657-1077-4b00-b65b-4d03fbea8064\" rel=\"nofollow noopener\" target=\"_blank\">a coworking business<\/a>, which currently has more than 60 tenants, and an event space to activate empty floors. The events space, <a href=\"https:\/\/945market.com\/en\/l4-event-space\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">which hosts its grand opening on Friday (opens in new tab)<\/a>, will offer custom catering packages from Saluhall vendors; one expressed hope that this would boost business.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Despite employing ample security at the site, Ingka executives <a href=\"https:\/\/sfstandard.com\/2024\/09\/22\/mid-market-will-thrive-once-san-francisco-solves-its-drug-crisis\/\" data-post-id=\"972cd9b9-0c3e-41ca-aa3b-e4a84aba91de\" rel=\"nofollow noopener\" target=\"_blank\">admonished city officials<\/a> for street conditions in the area, which is in close proximity to an open-air drug market.
