CLOVIS, Calif. (KFSN) — Carrillo’s Mexican Restaurant on Bullard near Villa in Clovis is always packed with regulars. Norma Carrillo and her four brothers opened a decade ago.<\/p>\n
The brothers stay busy fixing your favorites.<\/p>\n
“I don’t know how they do it,” Norma said. “The restaurant is full, and they get everything so fast. Once they try the chile verde, they will come back.”<\/p>\n
Norma said she thinks her brother Herman makes the best chile verde in town.<\/p>\n
“We have good customer service and we have good flavor in our food,” says co-owner Eleazar Carrillo.<\/p>\n
Take the combination plates.<\/p>\n
“We have tacos, enchiladas, chile relleno,” Norma said. “You can have any meat you like. We have carnitas, chile verde, chicken and shredded beef.”<\/p>\n
The meats are tender.<\/p>\n
“My brother Alberto always buys the quality meat,” Norma said.<\/p>\n
Herman makes menudo and the soups.<\/p>\n
“We have cocido, menudo, posole,” Norma said. “Everybody loves the chicharrones.”<\/p>\n
Some plates simply sizzle.<\/p>\n
“It’s called Carrillo’s fajitas,” Norma said. “It’s bell peppers, tomatoes and onions mixed with a special sauce. It comes with rice and beans.”<\/p>\n
There’s shrimp, beef and chicken.<\/p>\n
“We started making quesabirrias and since then, non-stop,” Norma said. “We sell them all day.”<\/p>\n
Sometimes customers come in twice a day.<\/p>\n
“It makes us happy,” Norma said. “Very happy and proud and humble.”<\/p>\n
