CLOVIS, Calif. (KFSN) — Smoky BBQ tri-tip, chicken and hot links are served right off the grill at Lisa’s Southern Smokehouse at Tollhouse and Sunnyside in Clovis.<\/p>\n
“I want to bring a little bit of those flavors of the South and all over the country,” says owner Lisa Segura.<\/p>\n
Lisa calls this her famous BBQ chicken.<\/p>\n
“We marinate it first for two days before cooking,” she said. “We’re smoking it, and then we’re putting a glaze on top with our proprietary signature BBQ sauce. I really married the flavors of Mexican food with the BBQ.”<\/p>\n
Lisa and her husband also own Miguel’s Salsa Taqueria inside the Peacock Market.<\/p>\n
“So we’ve got our St. Louis spareribs right here — they’re going to be a pork spare rib,” says Adrian Salazar. “We’re going to start seasoning them up. These are going to go into our BBQ pit, our smoker, for about four hours.”<\/p>\n
“We use oak and almond to get a different flavor profile,” Lisa said.<\/p>\n
They’re sliced and served with different BBQ sauces.<\/p>\n
Pit master Max Pozos prepared the pulled pork for a sandwich.<\/p>\n
“Max comes in at 5 am every morning and gets the BBQ going,” Lisa said.<\/p>\n
The restaurant also offers a three-meat plate if you’re not too sure what you want.<\/p>\n
A trip to New Orleans inspired this surprise – cajun shrimp.<\/p>\n
“Discovering the holy trinity of flavors and putting it all together in our red beans and slow-cooking that,” Lisa said.<\/p>\n
Lisa also sells sweets inside the market.<\/p>\n
“I have banana pudding and beignets,” she said.<\/p>\n
Segura believes her dishes are a cut above the rest.<\/p>\n
“I want every flavor to be a memory in the making,” she said.<\/p>\n
