But it takes you to California\u2019s coolest wine region"},"content":{"rendered":"<p class=\"paragraph-block article-body undefined text-left\">Driving up a rutted dirt road in a white 2003 Chevy Silverado pickup with 365,000 miles on it, Bob Tillman of <a href=\"https:\/\/altacolina.com\/learn\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Alta Colina (opens in new tab)<\/a> wines wanted us to see what makes Paso Robles a magical place.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">From the summit of his rugged property \u2014\u00a0a high-elevation, 130-acre plot where he cultivates grenache, syrah, and mourv\u00e8dre grapes (the esteemed Rh\u00f4ne Valley trio known as <a href=\"https:\/\/www.wineenthusiast.com\/culture\/what-is-gsm-wine\/?srsltid=AfmBOoovk6_uiuTG57A21anSHKaE_6MlQlljF8Cd6B_OxVwGmwltoYzl\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">GSM (opens in new tab)<\/a>) \u2014 neat rows of vines sprawled in every direction. The landscape looked eternal, but compared with Napa or Sonoma counties, let alone Provence, Paso Robles\u2019 wine industry is a newcomer. Until the turn of the century, the region was known for olives and ranching.<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Grapes came later. When Tillman acquired the property in the early 2000s, \u201cyou could not see a vine,\u201d he said. \u201cPaso has blossomed in the last 20 years, and it\u2019s been a joy to be part of it.\u201d He drove us back to the winery\u2019s parking lot. Blessed with chalky soils, hot days, and comparatively cool nights, Paso Robles has become the epicenter of California\u2019s \u201cother\u201d wine country, the Central Coast, which stretches roughly from Santa Cruz to Santa Barbara. Over the last 25 years, wine has fueled the region\u2019s economic growth and population boom, even as Napa encounters <a href=\"https:\/\/www.bizjournals.com\/sanfrancisco\/news\/2025\/08\/12\/napa-home-sales-prices-decline.html\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">economic uncertainty (opens in new tab)<\/a> from overindexing on grapes.\u00a0\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">But Paso Robles\u2019 unique terroir can\u2019t avoid one uncomfortable fact: Study after study indicates that Americans, particularly those under 35, are drinking <a href=\"https:\/\/news.gallup.com\/poll\/693362\/drinking-rate-new-low-alcohol-concerns-surge.aspx\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">far less (opens in new tab)<\/a>. On the strength of its cabernets and zinfandels, Paso has only recently come into its own as a high-end travel destination. Now it faces the question of how it will continue to thrive.\u00a0<\/p>\n<p>A local getaway with no car needed<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Famed for its hot springs with allegedly curative properties, Paso was founded as a 19th century resort town. As the appeal of \u201c<a href=\"https:\/\/www.discovermagazine.com\/taking-the-waters-how-natural-springs-can-have-healing-benefits-46033\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">taking the waters (opens in new tab)<\/a>\u201d faded, agriculture came to dominate the local economy. As a result of this history, railroad tracks still pass through town, a relic repurposed as a tourism asset. And though Californians famously love their cars, Amtrak is the way to go, with tickets as low as $33 one way from the Bay Area.<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">My fianc\u00e9 and I hopped the 9:09 a.m. <a href=\"https:\/\/www.amtrak.com\/coast-starlight-train\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Coast Starlight (opens in new tab)<\/a> from Jack London Square to Paso Robles, arriving a little before 2 p.m. It was 30 degrees warmer than when we\u2019d left Oakland. An Amtrak virgin, I was an instant convert to the thrill of medium-distance train travel. It\u2019s everything a trip by plane or car is not: spacious, with reliable Wi-Fi and the freedom to move around. Rideshares are plentiful, and the train station is just south of the compact, walkable downtown, which, like Healdsburg in Sonoma County, is arranged around a square called Downtown City Park. It\u2019s dense with restaurants at all price points, from family-run <a href=\"https:\/\/spicemediterranean.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Middle Eastern joints (opens in new tab)<\/a> to <a href=\"https:\/\/www.fishgaucho.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Fish Gaucho (opens in new tab)<\/a>, an upscale cantina with hundreds of mezcals and tequilas.<\/p>\n<p>Excellent cocktails and Michelin-starred restaurants<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Wine is the focus, but not to the exclusion of all else, with art galleries across town and <a href=\"https:\/\/sensoriopaso.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Sensorio (opens in new tab)<\/a>, a massive light-art installation, just outside it. Upscale lodgings abound. This week, the 2-month-old luxury hotel The Ava announced the debut of <a href=\"https:\/\/www.emrepasorobles.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Emre (opens in new tab)<\/a>, a live-fire-driven Mediterranean restaurant. Paso also has a clutch of bars, ranging from a rustic, <a href=\"https:\/\/www.pinestreetsaloon.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">un-air-conditioned saloon (opens in new tab)<\/a> to the kitschy <a href=\"https:\/\/www.canetikiroom.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Cane Tiki Room (opens in new tab)<\/a> within walking distance of the main square.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Just off the central green space, the 5-year-old, indoor-outdoor restaurant <a href=\"https:\/\/www.alchemistsgarden.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">The Alchemists\u2019 Garden (opens in new tab)<\/a> offers some of the most complex cocktails I\u2019ve had in California. Co-owner and bar director Tony Bennett created a rotating menu based on zodiac signs, each available for a month at a time. The Libra combines dill-infused vodka, Greek yogurt, lemon, ginger, rose-hip liqueur, and sweet potato espuma. Pouring one is a multistep process: For the espuma, Bennett runs sweet potatoes through a macerating juicer and processes the resulting liquid with brown sugar and a mix of 15 spices, then adds emulsifying agents to obtain a foam. (There are lots more steps, but you get the idea.)<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">On busy weekend nights, he might serve 300 to 400 people. Almost everyone comes to town for wine, but \u201cthe lucky accident that turned Paso into what Paso has become is that we offer so much more,\u201d Bennett said. \u201cOur cocktail culture isn\u2019t just sweet-and-sour from a gun. We\u2019re making something better.\u201d\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Fine dining is another area of growth. Of California\u2019s four Michelin-starred restaurants not located in the Bay Area and Los Angeles, two \u2014 <a href=\"https:\/\/sixtestkitchen.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Six Test Kitchen (opens in new tab)<\/a> and <a href=\"https:\/\/www.justinwine.com\/campaign\/dine?utm_source=google&amp;utm_medium=cpc&amp;utm_content=evergreen_brand_rsa_na_na_visit-restaurant_na_shopnow&amp;igaag=85451953847&amp;igaat=&amp;igacm=7841653360&amp;igacr=714993603480&amp;igakw=the%20restaurant%20at%20justin&amp;igamt=e&amp;igant=g&amp;gclsrc=aw.ds&amp;gad_source=1&amp;gad_campaignid=7841653360&amp;gbraid=0AAAAADlvAYy7d40ZYIaLzWjqB0HV3LpKk&amp;gclid=CjwKCAjwup3HBhAAEiwA7euZukSb89VCvSZjXKc7fL7-0lU5ejGEBfXT_pLa7Fl6JPFIROJpP8CqIRoCscEQAvD_BwE\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">The Restaurant at Justin (opens in new tab)<\/a> \u2014 are in Paso. Just off the square, the Paso Robles Inn, among the city\u2019s most historic properties, scored a big win when <a href=\"https:\/\/www.charliepalmer.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">prolific chef (opens in new tab)<\/a> Charlie Palmer signed a deal to take over its steakhouse. Palmer, who has numerous restaurants in New York and Las Vegas, plus one each in Napa and Sonoma, will begin renovations in January. According to hotel GM Erica Fryburger, the restaurant will be called The Path by Charlie Palmer and will feature partnerships with local winemakers.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Elsewhere, Paso is taking strides to diversify its appeal beyond food and drink. Among the biggest draws is Sensorio, the 6-year-old, 35-acre light-art installation a few miles east of town that evokes the rainbow sugarcubes of San Francisco\u2019s own <a href=\"https:\/\/sfstandard.com\/2023\/11\/14\/san-francisco-golden-gate-park-entwined-public-art-jfk-promenade\/\" data-post-id=\"896e0c2c-bd45-4fc5-ad2a-f8c777b4a209\" rel=\"nofollow noopener\" target=\"_blank\">Charles Gadeken<\/a>. The centerpiece is the \u201cField of Light,\u201d an undulating expanse of 100,000 solar-powered flowers that gradually change color. (It\u2019s particularly beautiful immediately after sunset.) At <a href=\"https:\/\/www.mcpricemyers.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">McPrice Myers (opens in new tab)<\/a>, a producer west of town known for affordable yet high-quality cabernet and zinfandel, Billy Grant, the head of business development, pushes back against the narrative that Gen Z\u2019s teetotaling ways are driving the industry <a href=\"https:\/\/www.sfchronicle.com\/food\/wine\/article\/california-wine-industry-downturn-18711236.php\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">toward collapse (opens in new tab)<\/a>. Wine, he said, has always had ups and downs \u2014 and it\u2019s never been the province of the young. \u201cWhy are we so concerned that 25- to 30-year-olds aren\u2019t drinking wine, when I don\u2019t know anybody in this business who was drinking a lot of wine at 25 to 30?\u201d Grant asked. \u201cI wasn\u2019t.\u201d<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">In May, McPrice Myers unveiled a <a href=\"https:\/\/www.mcpricemyers.com\/experiences\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">new tasting room (opens in new tab)<\/a> with an airy, casual atmosphere designed to be as unintimidating as possible to people more accustomed to crushing White Claws. \u201cYou have to start these people off somewhere,\u201d Grant said.<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Nancy Ulloa of <a href=\"https:\/\/ulloacellars.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Ulloa Cellars (opens in new tab)<\/a>, a one-woman show producing white wines from lesser-known grapes, has another unconventional idea. Unlike stuffy, self-serious wineries that can be offputting to newbies, Ulloa says its wines include ingredients like \u201cpositive affirmations\u201d and \u201cgoddess energy.\u201d\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">She places strands of crystals on top of barrels and amphoras to infuse them with some of that positive energy during production. Many of her labels honor female deities or strong women.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">Tastings are $22. An optional four-crystal pairing \u2014 no, you don\u2019t get to keep the gems \u2014 is an auspiciously priced $11.11. He believes new generations will be seduced by organic wine-making\u2019s close relationship with the earth. Contrasting his wines with faddish canned cocktails, he noted that the latter are produced in an industrial park, and the cans come from a smelter. Meanwhile, he\u2019s out there every day nurturing his vines, adjusting the micronutrients, and testing the density of bacteria and fungi in the soil. Yeasts native to his vineyard ferment the grapes.\u00a0<\/p>\n<p class=\"paragraph-block article-body undefined text-left\">The only fabricated element is the glass bottle.
