What would have been a risky proposition just a half-decade prior was the safest of bets. Back then, the craft beer segment was booming, especially in suds-centric San Diego, where breweries and beer-centric bars were opening at a rapid clip across the county. The latter played a key role in driving that unprecedented growth.

At the time, the satellite taproom model that is now so popular among breweries did not yet exist on a local level. This left beer-focused bars as San Diego brewing companies’ foremost lifeline to the outside world and untapped consumers. Bolstered with dozens of taps and knowledgeable staffers, members of that class included O’Brien’s Pub, Blind Lady Ale House, Churchill’s Pub & Grille, Hamilton’s Tavern and Toronado San Diego.

Bottlecraft fit right into that mix, with Jensen’s concept quickly catching on and allowing him to expand, not just in San Diego, but up the California coast. Meanwhile, scads of entrepreneurs, ranging from local restaurateurs and hospitality groups to devout beer enthusiasts with zero business experience but tons of chutzpah, got in on the hot trend, opening beer-forward bars and eateries all over San Diego.

<img loading="lazy" decoding="async" class="lazyautosizes lazyload" alt="Patrons play Pool at Bock Bar in South Park on Thursday, August 20, 2026. (Photo by Sandy Huffaker for The San Diego Union-Tribune)

“When I first opened, craft beer had this crazy momentum, and it seemed like everyone was interested in it. Back then, the beer itself was the star,” says Jensen. “People would drive across town for a new brewery drop or an allocated beer release. It seemed like all we had to do was order the beer and get the word out that we had it, then eager customers would soon be by to scoop it up. A lot of us naively assumed that demand would keep growing forever. It didn’t.”

Today, the local sudscape is notably different. Years removed from the beer boom due to a myriad of factors – a global pandemic, rising operating costs, changing consumer tastes and perceptions regarding alcohol, to name a few – breweries are working harder than ever before, not just to succeed but to survive. Adding to that challenge is the fact many of the beer bars that championed them for so long have shuttered over the past decade.

Nearly all the venues from restaurant groups that jumped on the bandwagon in the 2010s are no more. Even some stalwarts, such as Hamilton’s and Toronado, are gone. Ditto smaller, more neighborhood-focused establishments that served as craft-beer hubs for their respective communities. Turnover is common in the hospitality industry, but for many years very few new beer bars came along to take the place of those that fell out, leading to concern among local brewery owners that one of their most vital avenues for reaching consumers may be dying a slow death.

But over the past few years, several businesses have arrived on the scene, filling in gaps, finding success, and offering hope for members of the craft-beer industry. Not surprisingly, Jensen is behind one of those businesses, a South Park beer bar called Bock.

Located on the same plot that formerly housed Hamilton’s Tavern, Bock has the look and feel of a European pub. Designed as a neighborhood bar serving a blend of old-world German, Czech, Belgian, and U.K. beers supplemented by new-world styles from American producers (including many local breweries), it was constructed from the ground up and took roughly four years to complete. During that span, many doubted Jensen’s concept and whether it would generate enough interest, but it’s been a hit since launching in March of 2025, particularly among South Park residents.

“Bock was never intended to be a museum exclusively for beer nerds,” says Jensen. “It’s been gratifying to see people experience the pub in different ways. Some come specifically for the beer list. Others come for dinner, a soccer match, trivia, pool, or just to meet friends. That’s what we wanted: a real neighborhood pub, not a room that only works when (a special) keg goes on tap.”

A key to Bock’s success is its uniqueness. It doesn’t look and feel like other local bars, something Chris Wilson, the owner of Barrio Logan’s Tiny Giant Taproom, believes is paramount. Installed in the long-dormant Barrio Logan tasting room formerly operated by defunct Iron Fist Brewing, his business features colorful interiors, plant life galore and arcade games. The last thing he wanted to do was come across as a “copy-paste” operation indistinguishable from any other beer bar. That ideology extends to Tiny Giant’s 30-tap beer list, which is ever-changing and offers a little something for everyone.

<img loading="lazy" decoding="async" class="lazyautosizes lazyload" alt="Bartender Regan Vaca pours beverages at Bock Bar on Thursday, August 20, 2026. (Photo by Sandy Huffaker for The San Diego Union-Tribune)

“Hands down, what appeals most to our clientele is variety and rotation. During our 18 months in business, there are maybe only a dozen beers that we’ve brought on multiple times,” says Wilson, who draws on his own experiences when trying to please fellow beer fans. “In San Diego alone, there are thousands of beers to choose from, and I get really bummed out when I walk into a place and I’ve had everything on tap like 100 times. Simply put, it sucks to be boring. Variety is the spice of life.”

Like Wilson, Edward Hong is a devout craft-beer fan. An engineer and co-owner of Miramar’s LHK Noodle Bar, he regularly travels the globe to attend premier beer festivals and visit world-famous breweries. Back home, he participates in one or more bottle-shares (potluck-style events where attendees bring special bottles of beer to share) per week, most of which take place at his restaurant.

A fixture in Mira Mesa for Cantonese and Vietnamese cuisine since 1986, LHK has gained a second following of beer-loving locals since 2021, when Hong installed a back bar. Its walls are lined with shelf upon shelf of bottles acquired during his travels — pouring beers from popular brewing companies, the wares of which can often be difficult to come by and aren’t typically found on other bars’ tap lists. Hong procures such rarities via relationships he has forged with brewers and brewery owners. Being willing to drive long distances to personally pick up kegs helps, as well.

“As one of San Diego’s oldest noodle shops, we’ve had regulars for decades. Many still come purely for the food, but the craft beer program has set us apart from other similar restaurants, brought in a new crowd, and helped the restaurant catch up with modern times,” says Hong. “It’s become a casual hangout spot, not just a stop for a quick meal.”

Reasons to stay a while include Hong’s bottle-shares, which have gained popularity almost entirely through word of mouth among the local beer intelligentsia. Sometimes they follow a theme, such as barrel-aged beers, sour ales or beers from a particular brewery, and sometimes they are freeform. Regardless, they have helped gain LHK a stellar reputation as a craft-beer destination, creating a strong bond between the business and a new set of loyal patrons.

“Over the past 15 years, I’ve chased lots of rare bottle releases and hype beers, but what I’ve enjoyed the most is good beer with good people,” says Hong. “Every time I look at the beer wall at LHK, I see more than just an homage to breweries. I see friends, memories, and moments tied to each beer we’ve shared.”

Bottlecraft, Bock, Tiny Giant and LHK share many similarities common to this business type, including a very important X-factor: passion. Most craft-beer bar owners and their staffers care not just about what’s in the glass, but the overarching community that’s been forged by enthusiasm for artisanal ales and lagers. And that pays off in many ways for the breweries whose products they serve.

“Beer bars do an exceptional job ensuring the beer they carry is fresh, their (tap) lines are clean, and the beer tastes exactly as the breweries intend. This creates a place that both the brewery and consumers can trust,” says Matthew Zirpolo, president of Carlsbad-based Burgeon Beer Co. “When we first opened, these bars helped springboard our brand and get our beer in front of a much wider audience of craft-beer drinkers. They were integral to our initial success and continue to help grow our brand every day.”

“Beer bars are essential to promoting a brewery’s brand to a different audience. Beyond the simple placement of a keg or two on draft, you can have fun and create a unique experience for their guests,” adds Derek Gallanosa, head brewer for Chula Vista Brewery. During his 15 years in the industry, he has teamed with the likes of Bock, O’Brien’s and others to hold meet-the-brewer nights, beer-and-food pairings and large-scale beer dinners. “Creating a lasting memory outside of your brewery can lead to new visitors to your taproom, as well as an increase in sales everywhere your brand is distributed.”

<img loading="lazy" decoding="async" class="lazyautosizes lazyload" alt="Front entrance of Bock Bar on Thursday, August 20, 2026. (Photo by Sandy Huffaker for The San Diego Union-Tribune)

During the lengthy period Jensen spent getting Bock built and open, many questioned why he was focusing on beer when the segment is down so far from where it was in its heyday.

“Craft beer is still worth championing. I believe small, independent breweries and wineries make more interesting products, employ people locally and express or even contribute to the identity of the places they come from,” says Jensen. “I think of it like sports: craft beer is our team. Bock and Bottlecraft are firmly in its corner, and when you come in, you know you’re among people who are rooting for the same thing.”

A list of beer-centric bars and restaurants is available online.

Brandon Hernández is founder of San Diego Beer News (www.sandiegobeer.news), a site providing daily coverage of the county’s brewing industry, a beat he’s covered for 20 years.
