San Jose’s street corners, which the couple deck out with striking textiles attached to a shade canopy, plastic stools, and the aroma of lemongrass, are Hết Sẩy’s stage. What tend to get missed are the regional gems, like bún kèn, a Khmer-influenced bowl of rice noodles and minced fish in coconut broth typical of Phú Quốc, and Hoi An’s cao lầu, a dry noodle dish featuring chile sauce, crisp pork skin, and five-spice-flavored pork. The Mekong Delta–inflected menu at Hết Sẩy changes seasonally and never fails to surprise and delight. Pork belly is cooked down in organic coconut water with pickled mustard greens and bird’s eye chiles until it becomes unctuous and jelly-soft, then stuffed into a bánh mì, the bread flecked with char spots from the grill. Coconut-scented
sticky rice from Koda Farms comes topped with five-spice caramelized chicken or oyster mushrooms. During evening service, the restaurant comes into sharper focus as an upscale-casual destination for impeccable food and wine, which is often sourced locally. The setup really only accommodates rice bowls and salad, which might seem basic, but Rizzi sees restriction as opportunity. Before opening Lou’s Takeaway in 2019, Rizzi managed the kitchen at a residential treatment center for drug and alcohol addiction in San Francisco, carefully stretching a limited budget to produce an exciting menu for clients.

The lessons he learned at the center have been handily applied to his own San Rafael restaurant. When planning the Lou’s menu, Rizzi starts with whatever’s local and in season, then makes use of freshly toasted spices, fermented ingredients, and his own hot sauces to layer on maximalist flavors that hit you in rapid-fire succession. Something crunchy, probably toasted peanuts or sesame seeds, finishes each plate. He doesn’t need a huge kitchen to do what he does.

One day, you might walk away from the pickup window with fried shrimp, their shells crunchy, like marine potato chips, seasoned with Sichuan pepper and a bracing, housemade chile paste. Or you might find slow-cooked beef short ribs, crisped at the last minute in a sauté pan, then finished with a sweet-and-sour tamarind-onion sauce hit with beef drippings. Roasted chicken, the little black dress of Lou’s, might be finished with North African spices or cumin-heavy Xinjiang skewer spices.

Carolyn Fong

Beef short ribs.

Lou’s doesn’t mess with that delivery app nonsense; you can place a preorder only by calling. But the idiosyncrasies remain. Rizzi still types up the menu on the extremely lo-fi website twice a day. There are still only about six stools for dine-in service outside the shack, if you care to look out at the parking lot as you eat. And whether it’s your first time or your hundredth time at the window, Rizzi and his crew treat you like they’ve been eagerly waiting to see you again. —S.H.

4: Azizam2943 W. Here on the other side of town, in the Silver Lake neighborhood, Azizam practically blends into the sidewalk on Sunset Boulevard, because owners Cody Ma and Misha Sesar (both of whom are half Iranian and half Chinese) have designed the restaurant in such a way that any distinction between outside and inside dissolves.

As is true of so many of the city’s glorious taco trucks and noodle shops and cafés, the most Los Angeles thing about Azizam might be the way it feels—low-key, open-air, with none of the pageantry of fine dining but all of the precision of fine cooking. There are restaurants you need to line up for and others that require you to pounce on available reservations. But is there anything more pleasurable than a restaurant designed to let you wander in? At your leisure, with a breeze whispering into your ear from the street, you can nibble on smashed green olives (which are so much more than mere olives, thanks to the addition of mint oil, the concentrated sweetness of pomegranate molasses, and shards of walnut) and slurp cold tamreh (a shaken froth of tamarind and dates). The inside is scruffy, with newspaper clippings of rave reviews hanging on walls that need a fresh coat of paint. And though Athenians 1 and 2 are closed (4 is in the nearby city of Cypress), there are no Greek ruins.

Still, here stands something worthy of The Odyssey: a trek through decades of dining that showcases the cultural and culinary transformation of Southern California, one menu item at a time.

Part of a generation of decades-old burger joints founded by Greeks in Southern California’s working-class neighborhoods—with a gyro often the only nod to their culinary roots—Athenian 3 offers solidly Middle American dishes, including a juicy rib eye steak breakfast plate, tart tuna salad, gargantuan omelets, and 16 sumptuous burgers.

But Greek-run burger joints like Athenian began to incorporate Mexican food once the working class in SoCal went from white to brown a generation ago. Nowadays, it’s basically a Mexican diner—best known for its breakfast burrito—that still serves some American dishes as well as gyros. The restaurant features two outdoor banners boasting about its popular breakfast star, while the main outdoor sign bearing its name is faded. All nine types of breakfast burrito are enormous and filling: Stay fully Mexican with a carne asada burrito, go wholly American with Polish sausage, or ask them to make it Chicano by mixing up those meats. What unites the variations is a relishy salsa that stings on some days but is always delicious.

It would take a good year to taste every item on offer, some far more outdated than others—such as the pollack fish special, which sounds like a hate crime when you say it out loud. But do study the menu as if you’re reading a Loeb Classical Library tome, trying to catch what’s new or find something you’ve never previously noticed. Athenian is a reminder that while California may change, we always need something to unite the past with the present—and few things are better than cheap food served unpretentiously to all. But spare some room in your stomach for the sides that chef-owner Daniel Castillo and his crew prepare. They’re more than just beef bros: Castillo knows that even a place famous for One Thing needs the Other Things to excel because diners are forever curious.

Milky mac and cheese is made crunchy with breadcrumbs; saucy pinto beans are sharp with the tang of salty cotija cheese; a dense potato salad is as rich as a helping of scalloped spuds. Even the straightforward pickled red onions and cucumbers Heritage strews across its barbecue plates speak to the care Castillo puts into everything from his low-and-slow smoking process to the alt-Western soundtrack that plays all day. The onions taste like those from a taco truck, the cucumbers sing of the spice and pungency typically associated with a Korean barbecue joint. The reason the lines seem to grow every month is that Castillo is always experimenting, as with the small strawberry salad he offered as a summer special. It looked like an effete joke: a jumble of the fruit, mint leaves, mixed greens, and pecans. But the salad glistened like morning dew and combined freshness, sweetness, and zest, a preparation that—along with the rest of his efforts—proved why Castillo was a 2025 James Beard Award finalist in the Best Chef: California category. Yes, eating all those sides will mean less room for Heritage’s legendary meats.
