This is the flagship, and the one the casino is clearly most proud of. Named after a tree that grows in the Sierra foothills, Manzanita is going for fine dining that doesn\u2019t feel stuffy.<\/p>\n
\u201cOur focus is to also make those luxury options affordable because we want anyone and everyone to feel welcome here,\u201d general manager Connor Jessop said.<\/p>\n
Expect prime steaks, seafood and \u2014 according to Jessop \u2014 hundreds of unique wine offerings. The man in the kitchen is chef Robert Vieira, a self-described proud Fresno and Central Valley native who has cooked at The Elderberry House<\/a> in Oakhurst and in fine dining spots in Los Angeles.<\/p>\n \u201cWe have a great future here for culinary and expect fine dining in this area,\u201d Vieira said. \u201cEvery dish \u2013 it\u2019s going to be perfect.\u201d<\/p>\n Casino general manager Mark Ward said the Manzanita experience is going to be \u201cover the top.\u201d<\/p>\n \u201cIn terms of service but also the quality of the food,\u201d he said.<\/p>\n Fuego Mexican Kitchen Fresno foodies, this one\u2019s going to be familiar. Fuego Mexican Kitchen is the second location of Fuego<\/a>, the Fresno taquer\u00eda owned by Javier Ramirez<\/a>. But \u2014 and this is the part worth paying attention to \u2014 the casino outpost isn\u2019t just a copy-paste of the original.<\/p>\n Aldo Ramirez, the restaurant\u2019s operations manager, said the Madera spot will offer new menu items you won\u2019t find at the Fresno location. Among them: fried pork belly chicharr\u00f3n.<\/p>\n That alone is worth the drive if you\u2019re the kind of person who plans weekends around a dish.<\/p>\n Clubhouse 99<\/p>\n Sports bar territory, and a pretty ambitious one. Clubhouse 99 has 56 television screens \u2014 yes, really \u2014 which means whatever game you\u2019re trying to catch is probably on somewhere.<\/p>\n The drink lineup leans beer-forward. Assistant manager Alejandro Alvarez said the bar is pouring craft beer \u2014 imports and brews from across California. If you\u2019ve been looking for a place to park yourself during football season that isn\u2019t your couch, this is a candidate.<\/p>\n Kopiah Coffee The casino\u2019s coffee spot takes its name from the Mono word for coffee \u2014 a small but nice nod to the North Fork Rancheria of Mono Indians of California, which owns the property. Details on the menu are limited so far, but if you need a caffeine jolt before (or after) a long night, it\u2019s there.<\/p>\n The food court Beyond the named spots above, the mall-style food court also has pizza, burger and Asian options. Think of it as the fast-casual wing \u2014 quick stops when you don\u2019t want to commit to a sit-down meal but also don\u2019t want another plate of nachos at the bar.<\/p>\n The bars, by the way<\/p>\n Even if you\u2019re not there to eat a full meal, it\u2019s worth knowing the bars have names rooted in the region. Whiskey Falls, Rock Creek and Willow Creek are all named after nature sites in the North Fork area that are meaningful to the tribe.
