Where Mediterranean Soul Meets French Precision

At Babette, diners discover a menu where Mediterranean inspiration merges with French finesse, Spanish flair, and delicate Japanese influence. Opening in November 2025, this velvet-draped speakeasy-meets-tea-room will offer an intimate sanctuary of craft cocktails and curated bites. Designed to feel like a world apart, it promises to be one of Miami’s most anticipated new experiences — an extension of Babette’s passion for intimacy, storytelling, and sensory delight.

A Chef’s Journey from Caracas to Coral Gables

Chef Dani’s story is as rich as his cuisine. Born in Venezuela, his earliest memories are filled with the scent of his mother’s cooking and the joy of making sandwiches with his father. Though he earned a law degree, his true calling led him to culinary school in Barcelona, where he trained at the legendary El Bulli, worked at Can Ravell, and cooked for royalty. His path later took him across continents — from Spain to Okinawa and New York City, where he collaborated with the late David Bouley, experiences that profoundly shaped his approach to modern gastronomy.

Today, Dani also serves as Chief Culinary Officer at Epicured, where he develops health-driven menus in collaboration with Partners in Health, reflecting his ongoing belief that food can heal, inspire, and connect.

Much of Babette’s visual poetry comes from Alexandra, a seasoned product designer and branding expert whose refined aesthetic gives the restaurant its warmth and elegance. Together, Dani and Alexandra have created a space that honors both legacy and innovation, where every detail — from the lighting to the plateware — contributes to an atmosphere of heartfelt hospitality.
