Step inside and you’ll find that the space channels a modern take on a 1950s diner, made for getting comfortable and staying a while. The airy, open format invites guests to grab a seat at a long communal table and get a taste of their menu elevating comfort food staples. Highlights include New York bagels topped with wagyu pastrami or house-made jams, alongside an extensive beverage program featuring house-made nut milks, Vanilla Cloud Cold Brew and Iced Strawberry Matcha.
But as evening falls, the energy shifts. Sable transforms into a dimly-lit vinyl lounge that is reminiscent of the warmth of a close friend’s living room. The programming is curated by the team behind Toe Jam XL, Phase 3 Presents, and strictly vinyl-only. The lineup blends local talent with global heavyweights like Sebastian Léger, Soul Clap and Pachanga Boys taking over the decks.
