Backhaus Bakery crushed our butter-soaked hearts into crumbly flakes when it shut its Ivanhoe Village bakeshop back in 2020. But good news, pastry fans — Olde Hearth Bread Co., a stalwart in the city’s baked goods scene, is poised to move into the picturesque strip in mid-May.

The artisan pastry house will move into the old House of Sploot pet shop space at 1231 N. Orange Ave., next door to the soon-to-open Hyperbolic Brewing. Olde Hearth closed its East End Market stall in 2021 to focus on wholesale operations, but husband-and-wife owners Shannon and Janice Talty felt the time was right to get back into the retail game.

“Nobody in Orlando was making natural breads when we first opened 28 years ago,” Shannon says. “There’s a culinary scene now. People appreciate a crusty ciabatta or flaky danish. We’re just making it easier for folks to get what they want.”

That includes fresh-baked goods delivered each morning from their main baking facility in Casselberry including baguettes and batards, croissants, chocolate chip cookies, raspberry tarts and sourdough boules.

“Our sourdough starter came with me from San Francisco, where I first became a baker,” says Shannon. “The starter was created with crushed grapes from Sonoma, and all these years later, a descendent of that wild yeast still flavors every sourdough loaf we bake.”

Better yet, the Ivanhood bakehouse will allow the pair to experiment with new ideas for breads and pastries.

“We can play around with ancient grain breads and seasonal pastry recipes, get some over-the-counter feedback, express our creative side and see what clicks with the neighborhood,” says Janice.

I’ll admit, those words are smooth like butter.
