The viral bagel shop, PopUp Bagels, known for its simple menu and grip, rip and dip technique, is opening two Florida locations in the coming weeks and dozens more are coming to the Sunshine State.

A location in Winter Park will open May 29. It will be followed by a June 5 opening of the Rockledge location, which is in the Viera area of Brevard County.

Florida’s first PopUp Bagels opened in Tampa in September 2025. Less than a year later, there will be eight in Florida.

Kal Gullapalli, PopUp Bagels partner and CEO of Built Different Brands, bought the franchise rights to PopUp Bagels in Florida north of Jupiter. He plans to open at least 30 locations throughout the state.

“We’re just trying to find the best real estate,” he told USA Today Network.

Tory Bartlett, CEO of PopUp Bagels, told USA Today Network-Florida his team knew one of the reasons Florida would be a good market was because of the amount northeasters moving to the state.

“We knew our customers were there. We knew people knew who were are,” Bartlett said. “We thought it would be a very lucrative market and we’ve been right so far.”

Two Miami locations and a Sarasota location are “in progress,” and Gullapalli said he plans to open “no less than three” in the Jacksonville area. Company officials also said they have been looking in Boca Raton, Fort Lauderdale, Coconut Grove and Coral Springs.

“In less than four years we should have 40 bagel shops in Florida,” Bartlett said.

There are just five bagel flavors on the menu: everything, sesame, salt, plain and poppy seed.

Aside from the bagels, the schmears are a must. The standard three flavors are plain, slated butter and scallion. There also are two rotating flavors each week. Past flavors include Cranberry Butter with Ocean Spray, Pickle de Gallo Schmear with Grillo’s Pickles and Mac & Cheese Cream Cheese with Kraft.

There are no sandwiches on the menu, and coffee was added a few years ago.

PopUp Bagels known for smaller, non-sliced bagels

The advice when eating a PopUp Bagel is to “Grip, Rip and Dip.”

PopUp Bagels does not slice its goods. Instead, the suggestion is to grip the warm, round bagel, rip off a hunk and dip it into one of the schmears. The size also is smaller than an average bagel.

“We want people to have more than one bagel,” Bartlett said. “We want you to have a plain and a salt and we give you the schmeer and we want you to enjoy that and try different things.”
