TALLAHASSEE, Fla. (WCTV) – Two Tallahassee restaurants are now Michelin-recommended, a major honor from one of the most recognized names in fine dining.
The world-renowned recognition was awarded to Black Radish and The Huntsman, both in their fourth year of operation. The eateries were chosen to be featured after the Michelin Guide completed its first statewide selection for Florida restaurants.
The Black Radish is known for a more vegetable-forward approach, while The Huntsman focuses on expertly crafted meats.

The two capital city establishments have already seen an uptick in sales since the announcement.
Matthew Swezey, a Black Radish chef and co-owner, said he was not expecting to be nominated after they applied. “It was kind of like, if this happens, it’d be great, but I’m not going to hold my breath,” Swezey said.

The co-owner said he felt that his restaurant could win, but wasn’t sure if the Michelin inspectors would agree. He says this recommendation could bring his restaurant into the spotlight.

“It will definitely put a little bit of us under a lens, I think, for a lot of diners, knowing that, you know, it’s a Michelin recommended restaurant,” Swezey said. “So I love that challenge because I know people are going to be coming in, maybe looking at us a little bit differently and under a more serious light.”

Just down the road, the Huntsman also received the recommendation. Executive Chef and Co-Owner of The Huntsman, Skylar Stafford, said he believes the Michelin recognition reflects the entire team’s effort.
“I can’t say enough good things about the entire team that we have here, front, back, behind the scenes. It really takes a whole village to make it happen.”

According to Stafford, many people visited the downtown fine-dining spot just hours after the announcement. “I think this is great for Tallahassee. There are a lot of other very talented chefs and great restaurants in town that also deserve a spotlight,” Stafford said.

While there aren’t any Tallahassee restaurants with Michelin stars, earning the Michelin recommendation makes these two restaurants one of the top dining spots to watch.
