Tampa’s BEST Cuban
Ingredients for rub:
1 cup salt
2 oz paprika
2 oz garlic powder
2oz oregano
2 oz cumin
Directions:
Place two pork butts in a pan
Butterfly them and probe with a carving knife several times inside and out.
Add 2 cups of mojo criollo cuban marinade (found at local grocery store), covering the meat, filling cavities created with the knife
Use all rub mix covering both inside and out
Cook at 325 degrees for 8 hours
Once tender, shred with two forks
Place in a large mixing bowl with all the juices and thoroughly mix the pork
Sandwich Making:
Cut Loaves of bread into 7′ rolls and split down the middle
On sheet pants, separate the tops and bottoms side-by-side
Right side is the bottom – spread mayonnaise evenly
Left side is the top – spread mustard evenly
Add 4 slices of ham on top
Add two slices of Swiss cheese
Serve or wrap individually
