JACKSONVILLE, Fla. – The Shoppes of Avondale are a well-known destination in Jacksonville for boutique shopping, eclectic dining, and community gatherings. But nestled among the local favorites is a spot known for something extra sweet.
For years, Biscottis has been serving up dessert staples that have become iconic across Riverside and the greater Northeast Florida area. Whether you’re stopping in after dinner or picking up something for a special occasion, their cake counter is hard to resist.
Recently, News4JAX went behind the scenes at B The Bakery to find out how these famous cakes are brought to life.
Rebecca Reed, Culinary Director at B the Bakery, said their shop has been making cakes for Biscottis for 30 years.
“The cakes here I think are so special because they are local and they are locally made and that’s one of the things we try to highlight,” Reed said.
While B the Bakery provides cakes for Biscottis, they also supply a variety of sweet treats to other businesses in the area. It’s a full-scale operation powered by convection ovens, mixers, and a dedicated team who bake and build these desserts with precision.
“When we do our box inventory we order about 500 boxes a week to be able to sell all of the cheesecakes and mousse that we have going out,” Reed said.
Every step of the process, from baking to decorating, is guided by recipes and measurements.
“There is a recipe and a formula for it,” Reed said. “Everything has the color and the numbers for the scoop and each cake build. That way, when we have so many hands making these cakes, we’re able to be consistent.”
While the exact ingredients weren’t divulged, one thing is clear: the team at B the Bakery takes pride in crafting the cakes that have become a tradition for many Jacksonville families.
