Moussaka is a dish most associated with Greek cuisine, consisting of layered eggplant, often fried, meat sauce and béchamel sauce, resembling a casserole or lasagna. However, there are numerous variations of the dish through the Middle Eastern, North African and Balkan worlds.
Balkan-style moussaka is made up of potatoes. Lebanese moussaka (maghmour) has a more stew-like consistency and utilizes chickpeas simmered in a tomato sauce with roasted eggplant. Turkish moussaka has an olive oil and tomato sauce base with minced meat, peppers and eggplant. The Egyptian version is more curry-like.
