Chill Bros makes its ice cream from scratch in small batches using techniques learned during founder Max Chillura’s training in Bologna, Italy, widely considered the birthplace of gelato.
Each flavor starts with a custard base made with Florida milk and cream, egg yolks, cane sugar, and salt, without using any artificial stabilizers or emulsifiers.
The company also makes many of its mix-ins, sauces, and baked goods in-house.
Ingredients include Plant City strawberries, Polk County orange blossom honey and Buddy Brew Coffee, along with imported Sicilian pistachios sourced from the slopes of Mount Etna in Sicily.
Friday’s event in St. Pete will offer around ten flavors, including classics like Mad Vanilla Bean and Strawberry alongside customer favorites such as Double Down Oreo and The Malty Millionaire, which contains chocolate-covered shortbread squares and thick swirls of house-made salted caramel.
If the event is successful, Davis said Chill Bros hopes to return to St. Petersburg for future pop-ups.
