Just a little over a month ago, Bar Kada \u2014 the Winter Park sake and small-plate lounge that I was a big fan of<\/a> \u2014 shuttered. Chef-owner Michael Collantes cited financial viability as the cause<\/a> and that he needed some time to figure out what to put into that windowless room<\/a>.<\/p>\n

He must have prayed to the heavens above, because here comes news that Sushi Saint, his handroll concept, will move into the windowless space between Soseki and Perla\u2019s Pizza, both of which he also runs.<\/p>\n

\u201cSake alone was a hard draw,\u201d Collantes says about Bar Kada, \u201cbut we hope being more of a dining destination will attract more people.\u201d<\/p>\n

Collantes says that the Winter Park location will differentiate itself from the original downtown location<\/a> and the Icon Park location (slated to open in Q2 2026) by offering the same dry-aging program for meats that they\u2019ve been offered for years at Michelin-starred Soseki<\/a> next door.<\/p>\n

\u201cAnd, for sure, caviar donuts will be on the menu,\u201d he adds.<\/p>\n

Sake will also be prominently featured, and Collantes hopes that this time \u2019round, more people will \u201cgo down the rabbit hole of our sake library.\u201d<\/p>\n
