\u201cPart of the food truck experience is going to the people,\u201d said Hohl. \u201cWe wanted to get back out there and be able to reach everybody.\u201d<\/p>\n
That was the plan anyway.<\/p>\n
After announcing they were leaving Slipaway, it all began to change in late December.<\/p>\n
\u201cSomeone came up to us and said they had a spot we could move in to,\u201d Cassell said. \u201c(Corrina) had a goal to be in a brick-and-mortar in a year.\u201d<\/p>\n
They pulled out of the food truck park at 7 a.m. Jan. 1 and \u201ctook a much-needed vacation.\u201d<\/p>\n
\u201cRight when we came back, we knew,\u201d Hohl said.<\/p>\n
They opened Chop It Up Sandwiches, their first brick-and-mortar, on Saturday, Jan. 31.<\/p>\n

It\u2019s tucked away inside a corner of Oasis Outdoors (previously Sunflower Market) off Hancock Bridge Parkway in North Fort Myers<\/a>.<\/p>\n \u201cWe can focus more on customers here,\u201d Hohl said. \u201cIt\u2019ll be more hands-on. And we\u2019ll have more energy.\u201d<\/p>\n \u201cWe don\u2019t just take orders,\u201d Cassell said. \u201cWe like to talk to everyone.\u201d<\/p>\n They\u2019ll take Sundays off at their new place, something they didn\u2019t often get to do in the food truck.<\/p>\n \u201cWe\u2019re Christian people with Christian values,\u201d Hohl said. \u201cWe want to be free on Sundays. One or both of us were at the food truck every day for six months except for maybe three Mondays.\u201d<\/p>\n The Italian is the best-selling sandwich at Chop It up.<\/p>\n How it all began<\/p>\n Hohl and Cassell met while working at a bagel shop when they were in college at Indiana.<\/p>\n \u201cI saw the viral chopped Italian sandwich on TikTok,\u201d Cassell said. \u201cI started making it, and it was the best thing ever. I tried it out on friends. Then we started to take it seriously.\u201d<\/p>\n The sandwiches with a twist are made by combining all the ingredients, chopping them into small pieces, and then placing everything into the bread or wrap.<\/p>\n \u201cYou get the best of everything in each bite,\u201d Hohl said. \u201cYou taste it all in every bite.\u201d<\/p>\n Chop It Up has opened inside Oasis Outdoors (previously Sunflower Market) off Hancock Bridge Parkway.<\/p>\n Cassell was supposed to start a job in Chicago, but things changed quickly for the couple.<\/p>\n \u201cWe moved down here after three or four months of dating,\u201d Hohl said. \u201cHis family was here. We bought a trailer and completely renovated it. He had no handyman skills whatsoever. He\u2019s good now.\u201d<\/p>\n They opened Chop It Up food truck in October 2024.<\/p>\n \u201cWe didn\u2019t know anything,\u201d she said. \u201cWe just jumped right in.\u201d<\/p>\n Evan Cassell and Corrina Hohl opened Chop It Up food truck in October of 2024.<\/p>\n They learned quickly.<\/p>\n \u201cThe first day we opened was a disaster,\u201d she said. \u201cWe would chop to order, and it took way too long. It was so messy.\u201d<\/p>\n \u201cWe just had to figure out the process,\u201d Cassell said. \u201cWe went to events everywhere we could. We made connections, went where other food trucks went. It started catching on. We would go to the same spots where people were excited to see us back.\u201d<\/p>\n A unique sandwich shop Chop It Up has found a new home inside of Oasis Outdoors (previously Sunflower Market) off Hancock Bridge Parkway in North Fort Myers.<\/p>\n When Slipaway opened on July 4, 2025, they were ready.<\/p>\n \u201cIt was nice being there,\u201d Cassell added. \u201cIt was great, great exposure for us. Customers knew where we were and could always find us. We kept seeing the same customers, which was great.\u201d<\/p>\n The Chicago-style Italian became their most popular sandwich. Ham, pepperoni, salami, provolone, hot peppers, lettuce, tomato, pickle, onion, oil & vinegar, Italian seasoning and mayo are all joyously combined and chopped together.<\/p>\n \u201cThe bread is baked fresh to order,\u201d Cassell added. \u201cIt comes out crispy and warm like it would from a bakery in New York.\u201d<\/p>\n Customers are welcome to enjoy their Chop It Up order anywhere inside Oasis Outdoors, an outdoor teak furniture store.<\/p>\n The subs are different and oh-so good.<\/p>\n Other signature sandwiches, available in half and whole sizes, include The Crunchwich (ham, turkey, bacon, sharp cheddar and more, with a homemade tangy chipotle aioli), Blazin\u2019 Chicken (chicken, pepperoni, bacon, sharp cheddar and more with a homemade buffalo ranch aioli), BLT, Basil Pesto and The Hoosier (turkey, chicken, bacon, pepperoni and more in an original sweet cranberry aioli). All of those, and a build-your-own, are also available in salads and wraps.<\/p>\n \u201cIt\u2019s basically the same things we had available before,\u201d Hohl said, \u201cplus more sides. I\u2019m really excited about them. Chicken salad, macaroni salad. Each has its own twist on it.\u201d<\/p>\n The baked-fresh-to-order bread at Chop It Up is warm, crunchy and oh-so-good.<\/p>\n And don\u2019t worry, the banana pudding is available too.<\/p>\n \u201cWe\u2019re doing hot sandwiches now that we have the equipment and space,\u201d Cassell said. \u201cWe eventually want to expand the deli part. Sell meats, cheeses. We will be able to do more now.\u201d<\/p>\n And instead of being served from their trailer, you\u2019ll find them behind the counter inside of Oasis Outdoors. Grab your order to go or eat in. Custom teak furniture is sold in the large space and Chop It Up customers are welcome to eat anywhere inside \u2014 tables and chairs, loveseats and sofas included.<\/p>\n \u201cCome hang out,\u201d Cassell said. \u201cEat, do some work. The chairs are comfortable.
