Yet the mystery behind it remains irresistible.<\/p>\n<p>Where does flavor truly begin, and why do some people swoon over bitter coffee while others chase fruity seltzers or fiery hot sauce?<\/p>\n<p>Those questions are sparking a pilgrimage to Orlando in March, where food and beverage innovators, scientists, students and flavor-obsessed professionals will meet for a dynamic flavor conference.<\/p>\n<p>To <a href=\"https:\/\/conference.ifas.ufl.edu\/flavorsummit\/registration-form.php\" target=\"_blank\" rel=\"noopener nofollow\">attend the biennial summit, which is March 16-18 at the Holiday Inn Orlando \u2013 Disney Springs, you can register here<\/a>. Regular registration rates (and the host-hotel group rate) are available through Feb. 20.<\/p>\n<p>The 4th\u00a0International Flavor Summit: A Gathering of Industry Perspectives connects science and real-world product development challenges, said <a href=\"https:\/\/crec.ifas.ufl.edu\/people\/faculty\/yu-wang\/\" target=\"_blank\" rel=\"noopener nofollow\">Yu Wang<\/a>, an associate professor of food science and human nutrition at the University of Florida Institute of Food and Agricultural Sciences (UF\/IFAS).<\/p>\n<p>Wang, a faculty member at the UF\/IFAS <a href=\"https:\/\/crec.ifas.ufl.edu\/\" target=\"_blank\" rel=\"noopener nofollow\">Citrus Research and Education Center<\/a>, will host and speak at the summit. During her presentation, she\u2019ll bring artificial intelligence (AI) into the flavor equation.<\/p>\n<p>Smells and tastes come from molecules. To figure out\u00a0which molecule is which, scientists traditionally compare the sample to a\u00a0known \u201creference\u201d chemical\u00a0(also known as a standard), she said.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-58247\" class=\"size-full wp-image-58247\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/02\/UFIFAS_Flavor-Scientists_Yu-Wang_Credit-Tyler-Jones.webp.webp\" alt=\"woman working in a lab.\" width=\"800\" height=\"450\"  \/><\/p>\n<p id=\"caption-attachment-58247\" class=\"wp-caption-text\">Yu Wang in her laboratory. Credit: Tyler Jones, UF\/IFAS photography.<\/p>\n<p>\u201cIt\u2019s kind of like matching a fingerprint to a card in a library,\u201d Wang said.<\/p>\n<p>The problem is that some reference chemicals are\u00a0hard to buy, very expensive or\u00a0not sold, unless someone makes them in a lab, which can take a long time.<\/p>\n<p>That\u2019s where artificial intelligence (AI) enters Wang\u2019s flavor research.<\/p>\n<p>\u201cAI can help us identify molecules faster\u00a0by learning patterns from large sets of measurements, so we can get good answers\u00a0with fewer reference chemicals, saving time and cost,\u201d she said. \u201cWe also use AI to help design\u00a0food and beverage formulas that match what consumers want, which helps teams develop products\u00a0faster, reduce trial-and-error and lower development cost.\u201d<\/p>\n<p>If you attend the summit, you\u2019ll hear leaders from Coca-Cola, PepsiCo, Givaudan, IFF, Symrise and others and meet peers across flavor houses.<\/p>\n<p>Topics at the conference include the latest trends and discoveries in the generation and science of flavor, consumer preferences and natural products as sources of novel flavor compounds.<\/p>\n<p>The program features internationally known decision makers and scientists from industry, government and academic institutions.
