Fueled in part by Gen Z and social media trends like TikTok\u2019s \u201ccaviar bumps,\u201d the global caviar market is projected to reach $688.34 million by 2032, according to Forbes.<\/p>\n<p>Whether served as a subtle accent or the centerpiece of a dish, a handful of Tampa Bay restaurants are embracing caviar with intention\u2014moving beyond the trend to elevate the dining experience.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39323\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/Don-Cesar-Caviar-at-Maritana04232026_2600-scaled.jpg\" alt=\"\" width=\"1707\" height=\"2560\"  \/>Maritana\u2019s classic caviar service (Stoltz White Sturgeon caviar), egg mimosa, cr\u00e8me fra\u00eeche, chives, shallot and buckwheat blini.<\/p>\n<p>While you may have seen so-called \u201ccaviar\u201d in the form of large, orange boba-like spheres or smaller, caper-like orbs, chefs emphasize a key distinction: true caviar comes exclusively from sturgeon. Everything else\u2014salmon roe, trout roe and beyond\u2014is simply roe, not caviar, notes Kenneth Tufo, chef de cuisine at <a href=\"https:\/\/www.doncesar.com\/the-don-cesar\/dining\/maritana\/?utm_source=google-gbp&amp;utm_medium=organic&amp;utm_campaign=gbp\" target=\"_blank\" rel=\"noopener nofollow\">Maritana at The Don CeSar<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39330\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/Don-Cesar-Caviar-at-Maritana04232026_2606-scaled.jpg\" alt=\"\" width=\"1857\" height=\"2560\"  \/>The Crab Tortellacci at The Don CeSar\u2019s Maritana restaurant includes braised leeks and Kaluga caviar.<\/p>\n<p>Within the world of true caviar, there\u2019s a range of varieties and flavor profiles. Beluga, light to dark gray in color, is prized for its buttery, mild taste and high price due to strict harvesting regulations. Osetra, a favorite among chefs, offers a nutty, briny flavor with hues ranging from golden to brown. Kaluga, often considered a more accessible alternative to beluga, has a similar clean, buttery profile and a dark amber tone. Sevruga is smaller and more intensely salty, with a darker gray appearance, while paddlefish, with its steel-gray color and mineral-forward flavor, is often seen as an entry point. Hackleback rounds out the group with its small size and distinctly earthy taste.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39324\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/Don-Cesar-Caviar-at-Maritana04232026_2603-scaled.jpg\" alt=\"\" width=\"2053\" height=\"2560\"  \/>Assorted caviars served with crisp gaufrette potato chips.<\/p>\n<p>When it comes to enjoying caviar, Tufo prefers to let it stand on its own. \u201cTraditionally, caviar is treated as the main focus and not just a garnish because heat, acid and strong flavors can destroy its texture and subtle flavor,\u201d he says. \u201cThink of it like truffles or any other luxury ingredients.\u201d<\/p>\n<p>Classic accompaniments include cr\u00e8me fra\u00eeche, toast points and Champagne or dry white wine. More unexpected pairings range from potato chips and buttered pasta to fried chicken or wagyu.<\/p>\n<p>\u201cOne of my absolute favorite pairings is caviar with very soft scrambled eggs on a crostino with chives! I also prefer classically served with cr\u00e8me fraiche, chives and blini,\u201d says Tufo.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39329\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/ASH-Caviar-Dish04142026_2639_1-scaled.jpg\" alt=\"\" width=\"1707\" height=\"2560\"  \/>At Ash, one of Ferrell Alvarez\u2019s concepts, Kaluga Malossol caviar is served with maple fish sauce\u2013cured egg yolk, lemongrass and gin cucumbers, preserved lemon cr\u00e8me fra\u00eeche and salt-and-vinegar potato chips.<\/p>\n<p>On the more unconventional side, Ferrell Alvarez, co-owner of <a href=\"https:\/\/www.properhousegroup.com\" target=\"_blank\" rel=\"noopener nofollow\">Proper House Group<\/a>\u2014the team behind <a href=\"https:\/\/www.roosterandthetill.com\" target=\"_blank\" rel=\"noopener nofollow\">Rooster &amp; the Till<\/a>, <a href=\"https:\/\/www.ashtampa.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Ash<\/a> and <a href=\"https:\/\/www.alteregotampa.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Alter Ego<\/a>\u2014has embraced creative caviar pairings. At Ash, alongside an elevated caviar service with gin-compressed cucumbers, maple fish sauce-cured egg yolks, lemon cr\u00e8me fra\u00eeche and housemade salt-and-vinegar potato chips, the restaurant also serves it atop housemade lemon gelato with pistachio milk crumble.<\/p>\n<p>Alvarez is also familiar with the rise of caviar as a trend, particularly through Rooster &amp; the Till\u2019s take on the \u201ccaviar bump.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39331\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/ASH-Caviar-Dish04142026_2644_1-scaled.jpg\" alt=\"\" width=\"2205\" height=\"2560\"  \/>Ash\u2019s Kaluga Malossol caviar served on a salt-and-vinegar potato chip.<\/p>\n<p>\u00a0\u201cCaviar started to become increasingly popular in mainstream America a few years back. I think the caviar \u2018bump\u2019 is to blame. It started with chefs doing collaboration dinners that had caviar sponsors, and there would be a ton of leftover caviar, so we would eat it off our hands in large dollops at the end of service. This took off with restaurants doing it for the guests,\u201d he says. \u201cEven though it\u2019s been played out currently, I appreciate it because it\u2019s another way for us to be able to educate the consumer.\u201d<\/p>\n<p>Beyond trends and creative pairings, caviar is increasingly within reach for everyday diners.<\/p>\n<p>\u201cSimilar to wine, you don\u2019t necessarily have to spend a lot of money to enjoy good caviar,\u201d Alvarez says.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39327\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/FluteDram-St-Pete04232026_2620-scaled.jpg\" alt=\"\" width=\"2029\" height=\"2560\"  \/>The tuna tartare at Fl\u00fbte &amp; Dram features yellowfin tuna, wasabi aioli, cr\u00e8me fra\u00eeche and salmon roe. Because these orange pearls come from salmon rather than sturgeon, they\u2019re technically classified as roe, not caviar.<\/p>\n<p>It\u2019s a point echoed by Bella Mangiafico, general manager of <a href=\"https:\/\/flutendram.com\" target=\"_blank\" rel=\"noopener nofollow\">Fl\u00fbte &amp; Dram<\/a>.<\/p>\n<p>\u201cThe misconception I often see is that caviar is only for millionaires. People hear \u2018caviar\u2019 and think it\u2019s thousands of dollars. Caviar can be for everyone,\u201d she says. \u201cIt ranges in price, and with the right guidance, anyone can access it.<\/p>\n<p>\u201cWith apps like <a href=\"https:\/\/www.instagram.com\" target=\"_blank\" rel=\"noopener nofollow\">Instagram<\/a> and <a href=\"https:\/\/www.tiktok.com\/en\/\" target=\"_blank\" rel=\"noopener nofollow\">TikTok<\/a>, people are sharing their caviar experiences. It\u2019s getting rid of the stigma that caviar is too expensive and showing that it\u2019s more accessible than people think.\u201d<\/p>\n<p>Fl\u00fbte &amp; Dram leans into that accessibility \u2014 it is a caviar and Champagne bar, after all. In addition to classic pairings, the team experiments with unconventional options, including topping chicken nuggets, stuffing olives for a dirty martini, and serving caviar on oysters, Cool Ranch Doritos and watermelon.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39325\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2026\/05\/FluteDram-St-Pete04232026_2612-scaled.jpg\" alt=\"\" width=\"1883\" height=\"2560\"  \/>Siberian caviar, derived from Siberian sturgeon, features firm, medium pearls with a bold, lingering flavor and hues ranging from brown to amber.<\/p>\n<p>For those new to caviar, Mangiafico recommends starting with hackleback, a domestic variety of small black pearls and a briny flavor.<\/p>\n<p>For purists who prefer to taste caviar on its own, how it\u2019s served matters.<\/p>\n<p>\u201cCaviar should always be served with a mother-of-pearl spoon,\u201d she says. \u201cCaviar interacts poorly with metal, and the flavor will change upon contact. A mother-of-pearl spoon is nonreactive and preserves the delicate flavors.\u201d<\/p>\n<p>From TikTok \u201cbumps\u201d to carefully composed dishes, caviar has evolved beyond its luxury label.
