PETERSBURG, Fla. \u2014 Andrea Osorio, her wife and mother recently opened <a href=\"https:\/\/www.carupanokitchen.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Carupano Kitchen<\/a> located inside St. Petersburg&#8217;s Foodie Labs.<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">\u201cWe are known for arepas, Venezuelan arepas, they are like a Venezuelan sandwich,\u201d said Osorio, who is proud to share cuisine from home.<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">\u201cTo be able to bring the food from our hometown of, specifically, Carupano, which is a small coastal town in Venezuela to St. Petersburg, Florida, it\u2019s just a huge privilege to be able to share who we are through our cuisine.&#8221;<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Osorio shared her slow-cooked wine reduction short rib arepa.<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Ingredients:<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">3\u20134 lb bone-in or boneless beef short ribs<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1.5 tsp salt &amp; black pepper &#8211; to taste<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1\u20132 tbsp olive oil<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1 small onion, diced<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">3 sweet peppers<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1\/2 bell pepper<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">3\u20134 garlic cloves, minced<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">2 cups dry red wine<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1 tbsp thyme &#8211; to taste<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1.5 tsp adobo &#8211; to taste<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">1\/2 cup brown sugar<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Steps:<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Season &amp; sear: Generously season the short ribs with salt. Heat oil in a pot and sear the ribs on all sides until deeply browned, about 2-3 minutes per side. Remove and set aside.<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Deglaze: Pour in the red wine, scraping browned bits from the bottom. Bring to a simmer and reduce for 5 minutes, until the wine has reduced by roughly half<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Add minced onions, peppers, garlic and spices<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Slow-cook: Return short ribs to the pot. The liquid should come about \u00bd\u2013\u2154 of the way up the meat, not completely cover it<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Cook low &amp; slow: Cover and cook on low heat for 3\u20134 hours or until desired tenderness, turning ribs once or twice, until meat is tender<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Finish: Shred or portion the short rib and toss with enough reduction to keep it juicy and coated.<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Stuff arepas (find at Carupano Kitchen or local grocer), sandwiches or simply put filling on top of mashed potatoes, making the short ribs the star!<\/p>\n<p style=\"margin: 0.5rem 0; line-height: 1.6;\">Serves four<\/p>\n","protected":false},"excerpt":{"rendered":"ST.
