What looks like a celebration is, in truth, control.<\/p>\n<p>For nearly three decades, Jackson\u2019s has mirrored the city\u2019s evolution. It began as a lone waterfront outpost, became a nightclub when <a href=\"https:\/\/tbbwmag.com\/category\/downtown-tampa\/\" rel=\"nofollow noopener\" target=\"_blank\">downtown<\/a> fell quiet and later reemerged as one of Tampa\u2019s most recognized restaurants.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"563\" src=\"https:\/\/www.newsbeep.com\/us-fl\/wp-content\/uploads\/2025\/10\/Untitled-6-28-1000x563.png\" alt=\"A man in a blue suit and purple tie smiles in front of a green wall.\" class=\"wp-image-87931\" style=\"width:324px;height:auto\"  \/>Chris McVety, owner of Jackson\u2019s Bistro on Harbour Island.<\/p>\n<p>\u201cBack then, there was nothing in downtown Tampa,\u201d says Managing Partner Chris McVety. \u201cJackson\u2019s had to be fluid. We became a nightclub for 14 years because that\u2019s what it took to survive. It wasn\u2019t glamorous, but it worked.\u201d<\/p>\n<p>That adaptability became the restaurant\u2019s greatest strength and its guiding principle.\u00a0<\/p>\n<p>Its latest brunch concept reflects that mindset, focusing on balance with lighter fare, cleaner ingredients and dishes that feel as good as they taste. The restaurant serves brunch every weekend and will debut <a href=\"https:\/\/www.jacksonsbistro.com\/events\/boozy-brunch-at-the-island-bar\" rel=\"nofollow noopener\" target=\"_blank\">Boozy Brunch<\/a>, a monthly event launching Sunday, Oct. 26, that adds live music and a fresh sense of waterfront energy.<\/p>\n<p>Downtown\u2019s turning point<\/p>\n<p>When McVety joined as an investor in 2014, downtown Tampa was quiet after dark. Harbour Island\u2019s foot traffic was thin and Jackson\u2019s large space demanded creativity to fill tables.<\/p>\n<p>Then the city changed. Towers rose, residents moved in and the waterfront filled with new restaurants chasing the same crowd.\u00a0<\/p>\n<p>\u201cThe demographic now has a lot more money,\u201d McVety says. \u201cYou\u2019re talking about young professionals in one- and two-bedroom units. But that flexibility also helped us survive when nothing was going on downtown.\u201d<\/p>\n<p>What once worked through versatility now requires focus. Reinvention had to mean refinement.\u00a0<\/p>\n<p>\u201cYou can\u2019t just ride nostalgia,\u201d McVety says. \u201cYou have to look at who\u2019s in front of you and ask, what do they need now?\u201d<\/p>\n<p>Building back better<\/p>\n<p>The next transformation began during what McVety calls \u201cthe coma days,\u201d a three-year stretch of litigation that left the restaurant in limbo.<\/p>\n<p>\u201cIt was very stifling to be in high-stakes litigation like that,\u201d he says. \u201cYou don\u2019t know your future. And the court system \u2014 it\u2019s expensive. It\u2019s not accessible to everyone.\u201d<\/p>\n<p>That experience changed how he leads. \u201cThe first thing I ask myself now is, what are we really arguing about? And is it worth the energy?\u201d<\/p>\n<p>The legal stalemate ended with a handshake, not a verdict. \u201cWe shook hands on the eve of trial and committed to peace,\u201d McVety says. \u201cWe went from fighting each other to a healthy relationship. I\u2019m proud of that.\u201d<\/p>\n<p>When work resumed, the first focus was the patio. The team moved the bar to open the view, upgraded the sound system and installed sculptural banyan trees built in Michigan. You can teach skills, but you can\u2019t teach caring. I look for people who care first.\u201d<\/p>\n<p>He compares rebuilding to learning patience. \u201cIt\u2019s like baseball,\u201d he says. \u201cYou don\u2019t win with home runs. You win with base hits.\u201d<\/p>\n<p>The patio renovations are now nearing completion, with final touches expected by the end of 2025. McVety says the interior redesign will follow, with <a href=\"https:\/\/tbbwmag.com\/category\/infrastructure-development\/\" rel=\"nofollow noopener\" target=\"_blank\">construction<\/a> targeted to begin in 2027.<\/p>\n<p>\u00a0\u201cThe patio has kicked our butts,\u201d he said. \u201cBut it\u2019s almost there, and when it\u2019s done, that sets the stage for everything else.\u201d<\/p>\n<p>Lessons in integrity<\/p>\n<p>Resilience at Jackson\u2019s often came through failure.<\/p>\n<p>In 2016, the restaurant was named in the Tampa Bay Times\u2019 Pulitzer-winning <a href=\"https:\/\/projects.tampabay.com\/projects\/2016\/food\/farm-to-fable\/restaurants\/\" rel=\"nofollow noopener\" target=\"_blank\">\u201cFarm to Fable\u201d<\/a> investigation, which exposed mislabeled seafood across Florida.<\/p>\n<p>\u201cI was furious,\u201d McVety says. \u201cI didn\u2019t even know it was happening. But I went through everything after that. I don\u2019t want to serve food I\u2019m not proud of.\u201d<\/p>\n<p>He responded by auditing every supplier and replacing vendors who didn\u2019t meet his standards. \u201cTell the truth and tell it fast,\u201d he says. \u201cI only want to serve food I\u2019m proud of.\u201d<\/p>\n<p>Menus were rewritten, vendors replaced and integrity became central to the brand\u2019s identity. But that\u2019s part of the fun \u2014 giving them something healthy and unexpected.\u201d<\/p>\n<p>In recent years, the kitchen has doubled down on quality and health, eliminating all seed oils except sesame oil, which is used in sushi. Shareable plates and house cocktails turn Sunday into a social appointment.<\/p>\n<p>Live congas and saxophone replace the old nightclub lights. Drink-tree flights and chef-driven dishes give <a href=\"https:\/\/www.jacksonsbistro.com\/events\/boozy-brunch-at-the-island-bar\" rel=\"nofollow noopener\" target=\"_blank\">brunch in Tampa<\/a> a new flavor and pace.<\/p>\n<p>For McVety, the event symbolizes more than a menu. \u201cWe sell an experience,\u201d he says. \u201cThe view, the music, the food, the service \u2014 that\u2019s the vibe. Alongside champagne and ros\u00e9, Jackson\u2019s has built a full lineup of mocktails and low-ABV cocktails as part of its growing commitment to balance and inclusion. \u201cNot everyone wants alcohol with brunch,\u201d McVety says. \u201cWe\u2019ve worked hard to give people options that feel elevated, not like an afterthought.\u201d<\/p>\n<p>He says his approach to leadership mirrors his approach to hospitality. \u201cI tell my children the hungriest people are often the ones who didn\u2019t grow up with much,\u201d he says. \u201cThey outwork everyone else. That hunger is what drives success.\u201d<\/p>\n<p>The same hunger, he adds, keeps the business evolving. \u201cThe biggest threat to us isn\u2019t competition,\u201d he says. \u201cIt\u2019s ourselves. Tampa is strong. The demand is here. We just have to keep delivering an experience people want.\u201d<\/p>\n<p>Looking ahead<\/p>\n<p>By late 2025, the newly completed patio will debut as the centerpiece of Jackson\u2019s next era, setting the stage for an interior transformation planned to begin in 2027. Among Harbour Island restaurants, its DNA remains clear: sushi, sunsets and social energy.<\/p>\n<p>Before marketing the overhaul, McVety and his partners focused on the foundations \u2014 physical, cultural and even symbolic. They traveled to Texas to select a single barrel at Garrison Brothers and to Mexico to blend a private Patr\u00f3n, both to be bottled under the Jackson\u2019s name.<\/p>\n<p>\u201cWe know exactly who we are,\u201d McVety says. \u201cWe sell a vibe. We want to make sure when they come back, it\u2019s great.\u201d<\/p>\n<p>That sense of accountability extends to the community. Jackson\u2019s has long underwritten New Year\u2019s Eve fireworks on the waterfront \u2014 a cost now shared with neighboring venues.\u00a0<\/p>\n<p>\u201cWhen I see the whole city line up to watch fireworks we paid for,\u201d McVety says, \u201cit makes me smile inside.\u201d<\/p>\n<p>The constant beat<\/p>\n<p><a href=\"https:\/\/tbbwmag.com\/category\/business-innovation\/\" rel=\"nofollow noopener\" target=\"_blank\">Reinvention<\/a> is not a pivot. It\u2019s a practice built on honesty, patience and the nerve to rebuild without losing your soul. For Jackson\u2019s, that work has turned a complicated past into a foundation for the future.<\/p>\n<p>On Harbour Island, the music still plays. The plates are lighter, the crowd sharper and the view unchanged.
