If you’re a fan of Gravely Brewing in Louisville’s NuLu neighborhood, there’s a new reason to stop by.The owner of the brewery is now opening up a new concept, and it’s located right next door. Greenside Pizzeria will bring fresh New York-style pizza right to your plate. Owner Nathaniel Gravely said the new restaurant has been a long-time goal, and the timing clicked after the brewery’s recent move.“Serious dough is kind of the motif,” Gravely said. “I lived in New York for three years. I think the pizza in Louisville is great, but I think there’s room for more great pizza.”Gravely said the location stood out immediately as NuLu continues to grow.“We discovered this property and this corner spot in a developing part of NuLu that’s still got, you know, some nice developmental potential behind it as well,” Gravely said. “I was like, we need to put Greenside here. It’s the perfect spot.”To build the concept, Gravely worked closely with Pizza Lupo head chef and owner Max Balliet, focusing on scratch-made ingredients and dough recipes that take three days to make. Along with a new pizza style, Greenside will also feature beer options made specifically for the pizzeria, including an Italian pilsner and other new releases.“We’re also going to debut a new kind of retro pale ale called Machine Head,” Gravely said. “That’ll be over here. And then eventually probably get into something that’s a little more Mediterranean-infused flavors.”The goal, Gravely said, is to capture the feel of classic New York pizza while pushing it into a more elevated lane.“New York and Brooklyn,” he said. “So we’re trying to kind of go into that traditional, you know, status, but then elevate to like get to that artisanal level of New York style pizza.”Greenside Pizzeria is set to open to the public Thursday, Feb. 12.
