New York City’s trendy bagel scene is once again branching out across the Hudson River into New Jersey.
Months after Apollo Bagels opened up shop in Hoboken, PopUp Bagels announced it would soon be coming to the Garden State as well.
While Hudson County has long been the first landing spot in New Jersey for New York restaurants, PopUp Bagels announced in an Instagram post Wednesday it will soon come to Union County.
“Westfield, the rumors are true,” the Instagram post read. “Our first New Jersey location coming soon…”
No opening date or specific location details has been revealed.

PopUp Bagels started as an at-home operation helmed by owner Adam Goldberg in Westport, Conn. during the COVID-19 pandemic. After a series of wildly popular pop-ups around New York and the Hamptons in which bagels often sold out in minutes, PopUp Bagels got into the brick-and-mortar game. There are now nine locations in New York along with outposts in California, Connecticut, Florida, Georgia, Maine, Massachusetts and North Carolina.
The shop is known for bagels on the small and crispy side (not unlike Apollo Bagels) with minimal toppings (plain, poppy, salt, sesame and everything) and unorthodox dips like Shirley Temple cream cheese and buffalo butter. While most bagel shops obviously put toppings on the bagel, PopUp Bagels encourages customers to rip their bagels and dip them in the spread.
PopUp Bagels doesn’t sell individual bagels, you’ll have to buy at least a dozen. And that, paired with two “schmears” can cost as much as $40.
On one hand, New Jersey doesn’t need a New York bagel shop. Our bagels are better than theirs. And we definitely don’t need bagels from Connecticut of all places, which is so hilariously obsessed its overrated pizza that I didn’t even know they had bagels. The price is absurdly high, and the locations across the country (including in bagel deserts like Florida and Massachussets) makes this feel more like a chain than a boutique.
On the other hand, I was very suspicious of Apollo Bagels when they came to New Jersey last year and I came away beyond impressed. Maybe PopUp Bagels will also change my mind.
But until then, I’m going to make fun of them while I enjoy some delicious New Jersey bagels.
