CANTON— Concessions at Canton Pavilion will have a fresh local twist this season with help from the Blue House in Madrid. 

The Blue Line Concessions will rework the traditional snack bar format with an emphasis on nutritious, local food, “made with care to serve the community,” Blue House founder Josh Taillon said. 

Taillon said he and his sister Sarah “are excited to bring The Blue House flair to this new endeavor,” offering Fresh salads, soups, kids charcuterie, which he called “fancy lunchables,” and   slushies made with  “special flavors using organic sugar and fruit purees.”

Burgers and fries won’t be absent from Blue Line’s offerings despite the reworked menu. Taillon  said that smash burgers with fresh baked buns and local meat and cheese will be on offer with hand cut fries made from local potatoes. 

Taillon said Blue House is also looking into the opportunity to offer take out options to service the Canton community out of the concession space.

Taillon said Blue Line Concessions will also create a social media page with the concessions menu and any specials and events that will take place. 

Canton Town Council member Randy Brown announced that Blue House would be the Pavilion’s  new concession operators at the Oct. 8 meeting of the town board, saying “they’re looking to expand a little bit on what a traditional concession stand is.” 

Brown added that the reworked concession stand hopes to offer “things that are good for the kids.”

The Blue House brand began in its current Madrid location and has since expanded to provide products at the Potsdam Food Co-Op and the Canton Farmer’s Market.

Canton’s joint Recreation Committee met on Sept. 23 to review a request for proposals for the concessions. Recreation Director Meghan Richardson noted at a recent meeting that the Canton’s Minor Hockey Association was looking to contract out food service at the Pavilion to focus on teaching youth hockey, “not being restaurant owners.”
