Terina in Bay Ridge, Brooklyn, is serving up a version that is so over-the-top, you’ll never look at a standard dip the same way again. It is massive, it is messy, and it is absolutely unreal. I went behind the scenes to see exactly how this beast is built.
The Art of the Bread and Beef
It all starts with a fresh semolina roll. They slice it open and slather it with a thick, creamy roasted garlic butter. They don’t just toast it—they slam it onto the grill to get it perfectly golden and infused with that garlic flavor.
While the bread is sizzling, the magic happens in a pan. The chef heats up their 8-hour slow-cooked caramelized onions with a generous pour of au jus and plenty of butter. Then, they toss in a mountain of prime rib, letting it soak up all those rich, savory juices.
Once the semolina roll is ready, they layer on slices of Gruyere cheese. Then, they pile it high with that prime rib and caramelized onion mixture.
The Money Shot
The result? Incredible. The sandwich goes into the oven for a quick toast to get the cheese perfectly bubbly and melted. When it comes out, it is heavy, hot, and looks like heaven.
