I walked into Mekelburg’s in Williamsburg, Brooklyn and knew we were in for something special. They are frying up a storm in the back, and the results are completely unreal.
Mekelburg’s serves up these thick, extra crispy chicken wings that are a total game-changer. I watched the chef brush them with a generous amount of their signature spicy maple wing sauce. The glaze is thick, glossy, and beautifully sticky. They toss the wings right in the bowl until every single piece is thoroughly drenched.
The Crunch Is Real
They plate them up with thick pickle slices and a side of creamy chipotle aioli. Look at that color. The combination of flavors here is elite.
The sweet and spicy kick from the maple sauce balances perfectly with the smooth, smoky heat of the chipotle aioli. You get that deafening crunch from the outside of the chicken, followed immediately by the tender, juicy meat on the inside. It doesn’t get any better.
My wife took a massive bite, and the crunch was loud enough to shake the room. The meat just pulled away effortlessly from the bone. Sauce was everywhere, and it was glorious. Who’s hungry?
