I came to El Castillo De Agua in New York City’s Lower East Side for one reason. I needed to witness the legendary Tres Golpes sandwich in person.

The build starts with soft Dominican sweet bread. The baker slices it wide open and presses it down on the hot grill until toasted. Look at that golden crust. Next, two fresh eggs get cracked straight onto the flat top and covered to steam.

Then comes the assembly.

They drizzle mayo-ketchup over the toasted sweet bread. After that, they stack three thick slices of fried Dominican cheese right on top. Golden. Crispy. Elite. Next up, three thick cuts of fried Dominican salami join the pile. Look at that crisp on the meat.

They press the top bun down, slice it in half, and plate it up. But they aren’t done yet. They pour even more creamy sauce right over the open cross-section. Pure insanity.
