I am always hunting down the most ridiculously loaded seafood in New York City. Most people head straight for standard warm butter lobster rolls. I respect the classic, but I need something next-level. That search brought me straight to Red Hook Lobster in Brooklyn. They make standard rolls, but their wild fried creation completely blew my mind.

The Standard Stunner

Every single roll starts the exact same way. They brush a massive split-top bun with liquid butter and toast it till it turns deep golden brown. Then comes the classic Connecticut style. They take six full ounces of tender, sweet Maine lobster meat and warm it up in a pot of melted butter. They pack that entire load of seafood into the toasted split-top bun. They brush more hot butter over the top and hit it with seasoning.

Look at that. It is a gorgeous, overflowing masterpiece of pure buttery goodness. They are never shy with that butter. The result? Incredible. But we are just getting started.

Fried Lobster Madness

Do not skip their fried lobster roll. They toss fresh, juicy chunks of lobster meat into flour. Then they submerge every single piece into their house-made beer batter. Drenched. They drop those battered pieces straight into hot oil. They fry them up until they turn golden, crispy, and piping hot.

Out of the fryer, those golden nuggets go into a big metal mixing bowl. They slather the fried seafood with a heavy pour of their house-made lobster caramel sauce. They toss the bowl repeatedly until every piece is completely coated in that thick, shiny glaze.

Assembly is pure food art. They grab another toasted bun, squeeze a thick ribbon of Kewpie mayo inside, and lay down a bed of shredded lettuce. Then they pile those sticky, glazed fried lobster chunks on top. I mean absolutely packed on. They keep stacking piece after piece until the bun is completely hidden beneath a mountain of fried seafood.

They finish it with a sprinkle of scallions and a fresh squeeze of lemon juice. That contrast of hot, crunchy beer batter, sweet lobster caramel sauce, and rich Kewpie mayo is pure magic.
