The return of the expanded Holstein competition highlights the fair’s broader focus on New York’s multi-billion-dollar dairy industry—the leading agricultural sector in the state. Alongside the breed competitions, organizers are rolling out dedicated educational programming to spotlight the next generation of dairy leaders, including the debut of “Behind the Halter — Celebrating the Youth Behind New York’s Dairy Cattle.” Displayed across digital monitors in the Dairy Cattle Barn, the campaign showcases 4-H and junior exhibitors and the intensive daily care, nutrition, and management required to prepare show animals.
The 2026 fair also marks the opening of substantial new agricultural infrastructure, including a 4,000-square-foot FFA Building on the west end of the grounds. Designed to support agricultural education, the facility will serve as a dedicated hub for New York FFA students and educators during the fair before becoming the permanent home of the annual FFA State Convention starting in May 2027.
Dairy-focused consumer attractions feature prominently throughout the grounds, led by the iconic 800-pound Butter Sculpture and a new “Big Cheese” display in the Dairy Cattle Building featuring a 1,400-pound cheddar wheel crafted with milk from Locust Hill Dairy Farm in Mannsville. In addition, the 53-foot Mobile Dairy Experience and Dairy Discovery Center trailer will operate daily near Suburban Park, offering interactive exhibits on modern milk harvesting, environmental sustainability, and regional economic contributions.
