SYRACUSE, N.Y. — The 2026 butter sculpture at the New York State Fair is celebrating America’s 250th anniversary with a New York twist.
The 58th annual American Dairy Association North East Butter Sculpture used about 800 pounds of butter.
The sculpture, titled “Milk. Memories. Tradition. Rooted in New York.” features scenes like baseball in Cooperstown, America’s first U.S. state fair held in Syracuse, the New York City skyline, fireworks and summertime ice cream.

Artists Jim Victor and Marie Pelton from Conshohocken, Pennsylvania, spent 11 days creating the sculpture using butter from O-AT-KA Milk Products in Western New York.
This year marks the fifth time color has been added to the sculpture for extra detail.
The grand unveiling occurred on Tuesday, just a day before the Fair’s official opening.
The Fair runs Aug. 26 through Sept. 7.
