Every single time I walk into Bark Barbecue in Brooklyn, New York, my mind gets blown. I am not exaggerating. The moment Chef Reuben unwraps that smoked brisket, you know you are about to witness pure barbecue perfection.

Look at that.

He unwraps the foil and immediately pours all those rendered, savory juices right back over the top. Drenched. Every single drop gets smacked back onto that beautiful dark bark before the first cut is even made. The smell alone is enough to make anyone weak in the knees.

Then comes the slice. Chef Reuben glides his knife right down the middle, opening up a deep red smoke ring that looks almost surreal. Look at that glistening cross-section. He stacks those massive halves right on top of each other, letting the rendered fat shine under the lights.

He cuts me off thick, heavy slices of pure fatty brisket. Four massive, perfectly marbled pieces laid out on the cutting board. You can see the steam rising off the meat as it sits there calling my name.

It is time to devour.

I pick up a full slice with my bare hands, and it drops under its own weight. This has got to be the juiciest brisket in America. I take a massive bite, and every single mouthful literally melts in my freaking mouth. No chewing required.

Look at this pull. I hold the slice up, and it gently pulls apart with zero resistance. It is ridiculously tender, incredibly smoky, and packed with that sharp black pepper kick on the crust. The balance of render, smoke, and seasoning is elite.

But you cannot stop there. You simply cannot skip their honey butter cornbread.

They take a huge, golden slice of warm cornbread and cascade sweet honey butter all over the top. It drips down the sides, soaking straight into the center. I grab it with both hands and dive right in. Soft, sweet, rich, and perfectly complementary to that smoky meat.

The whole experience is mind-blowing. Incredible.
