I am one of those people who will never turn down a slice of pizza. Deep dish, thin crust, heck, even a slice of bread with tomato sauce and cheese, I am all about it.

I will say that I do prefer some types of pizza over others. Hands down, the best style has to be New York style, in my humble opinion. While I have never been to New York to enjoy this particular style of pizza, I have had the honor of getting a slice or two from pizzerias that do make a very close replica.

There is a big difference in the water in Colorado versus the state of New York. Water in Colorado is harder, and the water in New York is much softer; it is the magical ingredient that makes New York pizza and bagels so special.

One Colorado pizzeria has perfected replicating New York’s water thanks to a filtration system called the New York Watermaker. This filtration system will send electromagnetic pulses throughout the water, giving the sediment filter a chance to pull impurities out of the water, and then it goes through an ozone generator, using UV light. This process gives Colorado water the exact makeup of tap water in New York City.
