Viva Las Vegas steakhouses in New York City: After iconic Vegas steakhouse Golden Steer opened its first-ever second location in Greenwich Village earlier this year, another Nevada-based restaurant is making its way into Manhattan this spring. Carversteak will open in Midtown West inside the Civilian Hotel at 305 West 48th Street, near Eighth Avenue, in April.

“With Carversteak Las Vegas located in the entertainment capital of the country, we thought there was a natural synergy to bring that energetic concept to New York City,” the team shares via a rep.

The Rockwell Group is designing the 2,400 square foot, 124-seat space, taking its cues from legacy Theater District steakhouses. Think: wood and brass details and leather banquettes.

Carversteak’s New York menu will be a modern one. Expect lots of meats, like wagyu from the U.S.Australia, and Japan; aged cuts; and huge tomahawks. Other dishes include a variety of potatoes like twice-baked topped with Irish yellow cheddar cheese and smoked bacon, alongside lobster-truffle mac and cheese, and the raw bar. Drinks include freezer martinis, whiskeys, wines, and nonalcoholic options.

Executive chef Daniel Ontiveros also oversees the Vegas location, and previously worked at Joël Robuchon at the Mansion at MGM Grand and Vegas Carversteak. Francesco Lafranconi, the vice president of beverage and hospitality culture at Carver Road Hospitality, is creating the drinks menus.
