Vegas import Carversteak, which opened in March in Midtown West, is more corporate than another new steakhouse import from the same city, the Golden Steer. Born in a casino in 2021, the New York Carversteak, run by Carver Road Hospitality, is tucked within the Civilian Hotel. Its hotel environs are reinforced when you have to venture down to the basement for the bathrooms — someone called it an odyssey. Yet there are still luxe details. A server brings diners a box of knives created in Japan, China, and France to choose from. And yes, there’s a baked Alaska (called Baked NYC on the menu) fired up on a cart.
